Brisket Question

I'm making a brisket for a party using the attached recipe but I was hoping someone would tell me the bestway to adapt it for a 8.5 lb brisket.

The recipe says 350 for one hour and then 3 hours at 300 degrees for a 4lb brisket. I don't want to go too low and cook mine too long at too low of a temp, but I'm not sure how high it too high for too long for a 8.5 brisket. Ideas?Should I just consider cutting it in half?

Oh, and any good ideas for kid friendly sides would be appreciated too.
