Almond milk

Anyone try this? A friend introduced me to it, and I have to admit that it is QUITE tasty. I got the Blue Diamond Vanilla for use on my cereal, but I've got a coupon for a free carton of Silk that I'm going to try next.

You can even make your own. I haven't tried it myself (making my own) but my sister started a natural diet and has been making her own and really likes it. I've tried it in the past (store bought) and liked it. The version I got was sugar free which was nice. I think it was the Silk brand. Here's a link for your own, if interested. Save money and make your own. Almond milk is a good source for calcium. Other non-dairy milks you can easily make yourself: oat, rice, other varieties of nuts, cashews (which is a fruit, not a nut), hemp, sesame, sunflower, pumpkin seed....

A great little book on the subject is "Not Milk...NUT MILKS!" by Candia Lea Cole.

Recipes in the book include:

Apple Ginger Almond Milk, Banana Almodine Milk, Mellow Carob Cocoa Almond Milk (a great recipe to use 100% Cacao Cocoa), Mocha Mint Almond Milk, and many others.

I've been making non-dairy milks for decades.

I think the "use by" date is previous to opening (for the shelf stable product, but different for their refrigerated product). After opening, (and for the refrigerated product) this is what the website for Almond Breeze says: How soon should I use Almond BreezeÃÂ® after I open it? After opening, REFRIGERATED Almond Breeze should be used within 7 days. SHELF STABLE Almond Breeze should be used within 7-10 days of opening. Because Almond Breeze does not contain preservatives, it is susceptible to spoilage after being opened for a prolonged period of time. Do not leave opened Almond Breeze unrefrigerated for an extended period of time. Storage at room temperature will shorten the shelf life and just like regular dairy milk and will spoil if left unrefrigerated too long. Blue Diamond does not recommend trying to extend the Refrigerated Ã¢ÂÂUse ByÃ¢ÂÂ or Shelf Stable Ã¢ÂÂBest BeforeÃ¢ÂÂ time frame of Almond Breeze and Blue Diamond will not guarantee the quality of the product beyond this recommended time frame.

It actually has a fairly long shelf-life, even several days or a week after the sell-by or use-by date, as long as it's kept cold. But if you leave it at room temperature for a prolonged period of time, all bets are off. It will go "off" more quickly the more often and the longer it's left at room temperature. If you are only needing almond milk as a substitute for a small amount of cow's milk in muffins, you could use water or juice instead. Another option is to make an alternative milk as needed, which could mean a small amount of almond milk, oat milk (made with oatmeal and water), rice milk, cashew milk, whatever you have on hand.... All you need is a blender, water and a strainer or a Nut Milk Bag. But homemade almond milk has a very short storage life - two to three days. I keep powdered coconut milk on hand (Wilderness Family Naturals), and that would also be a time saver for a milk alternative - it mixes in warm water and you can make it as weak or rich as you need it. I use reconstituted powdered coconut milk to ferment homemade coconut milk kefir, which is a great substitute for yogurt. I don't believe in consuming dairy, and I avoid soy, so I use a lot of nut milk. It's easy and cheap to make your own. Just blend soaked almonds with water, though it works best with a high-speed blender. Or, even easier, blend a little almond butter with water and you get instant almond milk. If you make it yourself, it's even cheaper than dairy milk and so much better for you and the environment. Additionally, you still get the benefits of the live enzymes that the packaged pasturization destroys. Hemp milk is also great, and absolutely loaded with nutrition.

I have been wanting to try it but on a tight budget if I don't like it I'd probably have to throw it away.LOL I have wondered about giving it to the twins. Would it be OK for them to drink? I make them a smoothie with vanilla yogurt and milk and either chocolate or strawberry syrup every morning.They would probably love the taste! Steph,do your kids drink it?

Michael, I've seen almond milk, but never tried it.

Does it taste like almonds at all? I like almonds, but I don't know if I'd like almond flavor in my oatmeal or my raisin bran...

We always have a carton in the fridge. I use it mostly for breakfast smoothies, but I also use it in pancakes and muffins. I only use the Blue Diamond kind because that's the only kind I've ever found.

Making it yourself is very easy, so I don't know why I don't do it more often.
