How long does almond milk keep in the fridge once it has been opened?

There should be a use-by date on the carton. It's similar to cow's milk, it keeps better/longer if your refrigerator is colder than 40-degrees F and you don't leave it at room temperature for extended periods of time.

Because of all the additives in commercial almond milk, it DOES last much longer than homemade almond milk (which only keeps 4 or 5 days - I've used it up to a week after making it).

If you are interested, it's much less expensive to make it yourself and you'll end up with the pulp you can use for baked goods. I use the pulp to make cereal, crackers, cake, cookies, muffins......all kinds of things. I make 1-cup of almonds into almond milk every week.

I think the "use by" date is previous to opening (for the shelf stable product, but different for their refrigerated product). After opening, (and for the refrigerated product) this is what the website for Almond Breeze says:

How soon should I use Almond BreezeÃÂ® after I open it?

After opening, REFRIGERATED Almond Breeze should be used within 7 days. SHELF STABLE Almond Breeze should be used within 7-10 days of opening. Because Almond Breeze does not contain preservatives, it is susceptible to spoilage after being opened for a prolonged period of time. Do not leave opened Almond Breeze unrefrigerated for an extended period of time. Storage at room temperature will shorten the shelf life and just like regular dairy milk and will spoil if left unrefrigerated too long. Blue Diamond does not recommend trying to extend the Refrigerated Ã¢ÂÂUse ByÃ¢ÂÂ or Shelf Stable Ã¢ÂÂBest BeforeÃ¢ÂÂ time frame of Almond Breeze and Blue Diamond will not guarantee the quality of the product beyond this recommended time frame.

Unsweetened would be the healthiest choice, I am assuming, but if you are a dairy lover, and are unsure of the switch, I would recommend trying something with a little bit of sweetness to it first. Though I have not had unsweetened almond, we have bought the unsweetened soy, and it is definitely a different kind of taste compared to regular milk. Dairy milk to me has a bit of sweetness to it. Likewise, if you are used to 2%, I would say almond or soy is closer in consistency than rice milk. Rice milk to me is similar to skim milk because it is thinner. But like I said, we really do enjoy all of the kinds! Also everybody tastes things differently, so try a few different kinds before you decide what you like. Even from brand to brand it is different. I really dislike generic soy milks. As much as I would like to pay less, there is a big difference in taste and quality, IMHO.

It actually has a fairly long shelf-life, even several days or a week after the sell-by or use-by date, as long as it's kept cold. But if you leave it at room temperature for a prolonged period of time, all bets are off. It will go "off" more quickly the more often and the longer it's left at room temperature. If you are only needing almond milk as a substitute for a small amount of cow's milk in muffins, you could use water or juice instead. Another option is to make an alternative milk as needed, which could mean a small amount of almond milk, oat milk (made with oatmeal and water), rice milk, cashew milk, whatever you have on hand.... All you need is a blender, water and a strainer or a Nut Milk Bag. But homemade almond milk has a very short storage life - two to three days. I keep powdered coconut milk on hand (Wilderness Family Naturals), and that would also be a time saver for a milk alternative - it mixes in warm water and you can make it as weak or rich as you need it. I use reconstituted powdered coconut milk to ferment homemade coconut milk kefir, which is a great substitute for yogurt. Reconstituted powdered coconut milk also works for making pudding, added to smoothies..... -Grainlady

I like the Diamond (Almond Breeze) brand a lot better than Silk, which has gone all out into the almond milk business. My local Walmart, where I buy most of my groceries, has cut way down on their soymilk inventory and is pushing almond milk. I wonder how this relatively new popularity is going to affect the water shortage in California. Almond trees are notorious water hogs. I still prefer soymilk, but use both. To answer the original question, I never noticed that warning on the container, and mine always lasts longer than 7 days. I think we're both fine. :-)

Sometimes subbing almond milk for regular milk will give wacky baking results. I think I remember reading somewhere, for example, that using almond milk to make "instant pudding" will cause the pudding to NOT thicken. Google is your friend, so try a search for "almond milk in recipes" and see what you might find in the review sections as well. I haven't really used it for baking, but I usually use almond milk for overnight oatmeal....oatmeal, smashed fruit, chia seeds and almond milk in a small Mason jar, placed overnight in the fridge, et voila!
