Hot Noodles with Linda C

Even though you guys donÂt yet know me very well, IÂve been lurking for so long, and dream about food so often, that yall have crept into my dreams since you're the best cooks I know. Last night was Linda CÂs turn.

I dreamt I went to visit Linda C at her Iowa mansion. In my dreams you all live in mansions except Annie, whose idyllic farmhouse puts all of your mansions to shame. But I digress. Linda wasnÂt home but I walked in anyway like I owned the place and spotted a steaming bowl of homemade egg noodles on the counter next to a bottle of best quality gin.

They were delicious! And covered with a kind of thickened beef stock. Linda C walks in and admonishes me good naturedly because these noodles were made in honor of a dead person, and here I was eating them in Jethro Bodine fashion right out of the serving bowl. Thankfully all was forgiven. She shook her finger at me while with the other hand POOFed something for the mourners.

SoÂ now I have to have egg noodles with a thicken beef broth sauce. This sounds German. Are there any Germans in the house who can come to my rescue? Should I boil the noodles in the beef broth? Or make the noodles and the sauce separately? Any ideas would be appreciated.

Were those noodles served in Linda's beautiful Vista china by Mason? And, was she wearing her wine ring in her nose? If not, then you might not have been with the true LindaC -hmmmmmm....bears some looking into.....

I's sautee some mushrooms with a chopped shallot or 2 in some butter, dump it into the thickened beef stock, add the noodles and cook until the noodles were done....then serve it up with a nice grilled steak and a tossed salad....and hope it wasn't a nightmare.

Freezing is probably the best method of preservation for all yardlong beans... I have done so for years, with great results. Blanching times can vary, depending upon several factors... so when you first begin freezing yardlongs (as with any new vegetable) you might want to do a test batch before freezing large quantities, and adjust the blanching time accordingly. Pre-measuring batches by weight will give the most consistent results. For me, to freeze 1 pound of cut yardlong beans, I blanch them for 3 minutes, then throw them immediately into cold water to cool them. Rapid transfer after blanching & quick cooling are especially important for yardlongs, to preserve their delicate texture. The strainer baskets in large pasta kettles are very useful for this purpose. Normally, my well water is cold enough that I just use cold running water (into a large kettle) for cooling. But for yardlong beans, ice water would not be a bad idea, to get the best quality. Stir the beans constantly for at least the first minute of cooling. Yardlong beans are very susceptible to freezer burn, so it is best to vacuum seal them for long-term storage. I first freeze them in boxes (with enough moisture left after draining for them to hold together) then vacuum seal the frozen block. I've used vacuum sealed "Red Noodle" beans that were two years old, and they still had most of their original quality.

I usually make mine with mayo so that is why DH liked it so much. He not a big fan of mayo. I also subed EV olive oil for the peanut oil. Clare This is where I found the recipe when I did a search. Yep, here it is. They were a hit at the party! Raspberry Wings Posted by Linda C 12/10 1-1/2 c seedless raspberry jam 1/3 c balsamic vinegar 3 T soy sauce 1-1/2 tsp crushed red pepper 1 pkg (5 lb) frozen chicken wings, thawed Preheat the oven to 400 degrees F. Line two baking sheets with aluminum foil. In a small saucepan, combine all the ingredients, except the wings, over medium heat, stirring until smooth. In a large bowl, toss the wings with half of the jam mixture. Place on the baking sheets and bake for 50 minutes. Turn the wings and brush with the remaining jam mixture. Bake for 8 to 10 more minutes, or until no pink remains in the chicken and the sauce glazes the wings. Serve immediately. NOTE: If you substitute boneless, skinless chicken tenders for the wings, just reduce the baking time to about 15 minutes. And, for a change, you might even want to try this with apricot jam instead of raspberry. Serves: 4 to 6 Linda

As I was looking for posts of this recipe before it was posted in this thread, I saw that there is a part missing to this recipe...it seems they leave out to allow the rolls to rise before baking. I found the recipes posted a bunch of times and always leaves out allowing the rolls to rise until doubled in size. Is this a necessary step or do you not have to do that? Someone actually asked about it and some other person besides linda said to allow to rise first....I would like to hear this from linda herself.

That's funny Kyle!! I, too, have had dreams about CF members--scary isn't it??

BTW, welcome. I'm sure you will find in reality CF members are congenial for the most part.

Well at least you didn't eat the funeral lunch!

Yup, I've had dreams about CF people, too. One in particular sticks in my mind. (You know who you are, LOL!!)

Wouldn't boiling the noodles in the broth leave the broth kind of starchy? If anything I'd at least start them in water then finish them in the stock. That's what I do when I make avgolomono.

OMG too funny indeed!

I've had any number of CFers wander into my dreams in the past too... they seem to add just the right flavor to the dream LOL!

Anyway, I think I would saute a bit of shallot, and mushrooms the way Linda started, but then add just a bit of ground meat, brown it in the shallot onion and then add a splash of red wine and a little stock for the juice. Thicken with a small lump of butter that has flour mixed into it (beurre manie) to thicken then serve over the noodles with a salad and the rest of the wine to drink.

LOL that's too funny. If that was my dream it would be peanut butter noodles. I have always wanted to try making some. Maybe someone can beam a peanut butter noodle bowl over here. That would make my day! :-)

LOL Kyle, that's a hoot!

I'd do the brown sauce separately from the noodles. Saute some onions, garlic and mushrooms in a pan with butter. When soft , add more butter and flour to male a roux. Add hot beef broth and boil lightly until the consistency you like.

Add the cooked noodles.....

but I'm with Jim if it was me it would be spaetzel!

But....if you cook the noodles in the broth....the noodles thicken the broth...
but maybe I would also add some of that leftover medium rare beef tenderloin I had in the refrigerator too...

If this were my dream it would be freshly gathered eggs at Annie's!!

I've met Kyle in person so he's already hangin out with the "IN" crowd! LOL Kyle's a fun and funny guy, and this post fits right in with his personality. What fun!

Kyle, I had to laugh at your "idyllic farmhouse". I don't even have a farmhouse at the farm yet, it's still just a pasture and a hayfield and a garden, LOL.

Someday soon, though, there'll be a house and a barn and a black Morgan horse in my backyard and Elery would like to grow a couple acres of grapes, so it'll be an "idyllic farmhouse and vineyard". (grin)

As for the noodles, I'd cook them in the beef broth and see if that's thick enough. The noodles will soak up some of the liquid and will give off some starch that will thicken somewhat.

I do think I'd brown some mushrooms/onions/garlic, then add the broth, bring to a boil and add the noodles. You could add LindaC's leftover tenderloin too, if you can talk her out of it. Cook until the noodles are done and if they aren't thick enough add the buerre manie (which I just learned was the "official" name a few months ago from Ann T!). Amanda always uses the flour and butter mixture to thicken gravy, I just didn't know it was "buerre manie".

I know you've posted a couple of times but I don't remember if I properly welcomed you, so welcome out of lurkdom and into our dream world!

Hmmmmm....Homemade egg noodles and the best quality gin? Yep, I think she has the right LindaC! LOL (Maybe Linda had sent her wine nose ring out to be repaired...)
