Glad your husband liked it. I may try the white vinegar balsamic mix next time.
I find it just gets better upon standing in the refrig for a couple of days.

I usually make mine with mayo so that is why DH liked it so much. He not a big fan of mayo. I also subed EV olive oil for the peanut oil.

I have several slaw recipes, but i like this one best.
Says let stand for at least 4 hours....but less is OK too.

Fred Harvey Cole Slaw:
Shred one medium head of cabbage and one small onion, cover with 1/2 cup of sugar.
Bring to a boil 1 tsp sugar
1/2 Tablespoon salt
1/2 tsp dry mustard
1/2 tsp celery seed
1/2 c peanut oil
1/2 c cider vinegar.
Pour over the cabbage and set stand at least 4 hours before eating.
Keeps well.

This sounds similar to the coleslaw dressing recipe my mom always used. I don't like mayo so this is a favorite of mine... (I generally use a bit more onion)

Lowell Inn Dressing for Cole Slaw

3/4 c. vinegar (cider or red wine)
1 c. confectionerÂs sugar
1 tsp. celery seed
1 tsp. salt
1 tbs. grated onion
3/4 c. salad oil

Boil vinegar and sugar for 5 minutes

Add remaining ingredients and store in refrigerator.

This keeps well.

Shake before using and pour over chopped cabbage.

I got this recipe from a friend about 25 years ago and made it often. Everyone always loved it. Because no mayo - it is good for summer gatherings / cookouts. I lost the recipe - could only remember the name had Harvey in it and celery seeds that made it so unique - Thanks for posting the recipe - I will now be making it again!!!

Creamy Coleslaw Dressing

Cole slaw..no exact recipe, shred the cabb, carrot, celery, a bit of onion, sugar, sweet pickle juice, pinch of powdered mustard,pepper,reg. mayo unless the "gag me mayo" group is here, ha! and a dollop of sour cream.

I don't stock powdered mustard so I think I sub hot Hungarian Paprika
