Pumpkin Pie Questions and Linda C's Recipe

So we're inching up on Canadian Thanksgiving, and it's already decided that I'm really making tiny USA Thanksgiving. I found my thread from last year and all the parameters are the same, so I'm using the info this year now that the bad cook who took over then is out of the picture. (Last year wasn't so bad but it was very odd.)


My problem is that I really think I should make pumpkin pie and my recipe got lost years ago and I don't want to experiment. We used to make a lovely pumpkiny pumpkin pie but I can't remember at all how that happened. A lot of pumpkin pies I've tasted are more spiced cream pie than pumpkin.


So I looked at old pumpkin pie threads and Linda C.'s recipe sounds like the most like the one we like with the potential of being pumpkiny by using fresh pumpkin. I thought I'd use "pie" pumpkin and maybe a tad less sugar because it has such a smooth texture.


Does that sound like it will come out well? Trader Joe's canned is excellent in cake, but I really do prefer fresh pumpkiny pumpkin (rather than related squash) if it'll work in custard. I have a food mill, Breville food processor and Vita-Mix, so getting a smooth puree shouldn't be an issue. Oh, and the forum approved gigantor potato ricer. I think the FP would be the best choice, right?


I used to know how to make pumpkin pie. It has escaped me. Help!
