I have to say I have never made deviled eggs. I've eaten plenty, and if any of them had sweet pickle relish or sugar in them, I couldn't tell. I can't stand sweet pickles, and the thought of adding sugar to egg salad type stuff just plain baffles me. I wonder if the deviled eggs I've eaten had all that in it and fooled me, and I can actually stand sweet pickles better than I thought? The yolk would be on me, then, wouldn't it? Steve, my daughter, when she was nine, spent all her money on a large container of bitter apple candy from the ice cream man. I was mad at her for doing so, but it was her money, and she had to learn. Well, learn she did. Soon after eating most of the candy, she developed appendicitis, with her appendix rupturing. She can't stand bitter apple to this day, 16 years or so later. They may have been irrelevant to her appendicitis, but as far as she's concerned, they caused it. Sally

I also start my eggs in cold water, bring just to a simmer, then turn the heat off and let them sit for 10 minutes. Drain the hot water and immediately shock them with cold water. Fresh eggs don't peel well, so I usually use the store bought ones for devilled eggs, they're so stale right off the shelf they usually peel. I don't add anything to the water, but I roll the egg on the counter to crack the shell all over and it usually comes right off. I use a very sharp paring knife to cut the eggs in half, and the yolks just pop right out. I mash the yolks with a fork and add mayo, sweet pickle juice, some dry mustard powder, sour cream and a bit of sugar if the kids are eating them. If they're for me they get that mayo-based horseradish sauce, or mayo and horseradish, some dry mustard, salt pepper and a bit of sour cream. Yummy.... I use Penzey's smoked hot paprika for the sprinkle on mine, sweet paprika for the kids, or just salt and pepper on mine sometimes. For Easter, I dye them like Marilyn does, I just mix up some food coloring like I'm dying eggs in the shell, drop the egg white halves into the coloring and let them stay until I get a color I like, then drain the halves and stuff in the filling. Ellen, I find that the disposable bags break for me, even with frosting. I hate 'em, and so I either use a heavy duty freezer type ziplock bag with a corner cut off or a reusable plastic pastry bag. Real nice looking deviled eggs Donna L. I did unpack my deviled egg plate and it holds 12 plus room for a few more in the center. That is enough for our meal, that way I won't have a lot of them left. I too have the plastic lidded ones and they are good to store or take eggs in. Two Rubbermaid ones and one Tupperware one. I also have several different glass ones and do use those for other meals. I use either Miracle Whip or Mayo in mine plus, some sugar, and some mustard. Not a lot of any of it. Some times I like to boil more eggs than I need and use the extra yolks so they will be nice and full and of course paprika on the top. Then I just eat the egg whites that are left over :) Sue
