Latin Dinner last Night!!!

I had approx 25 for a Latin inspired dinner last night...it was a BIG HIT!!! We had Pernil,Cuban Sandwiches,Chicken Empanadas,Puerto Rican Yellow Rice,Cuban balck Beans,Spanish Pinkbean w/potato,White Rice and Yucca Fritters..dessert was Flan....We piped in Latin Music and ate food and drank ice cold beer and wine....OHHHHH SOOOOO GOOD!!!! Lots of fun! My stuffed fritters were the only thing that just didnt come out right was the first time I made them my friend Erica is Puerto Rican she came we were laughing so hard because they came out of the fryer looking like birds nest there suppose to look similar to a Italian Rice Ball except egg shaped...go figure thats something Ill have to work on! Funny though everyone said who cares...and they ate them!

How does one become a friend of yours? Every time you post about a party or Sunday dinner I find myself wishing I was there. Sounds like fun!

Isn't that a beautiful arrangement? It could be a painting. Ratatouille is a staple summer meal in our house. This year, even my eggplants were a gardening success so my stews come completely from our garden. I like mine served with along with a block of cut Amish cheeses and home-made crusty bread. Doesn't get much better than that. Sometimes I scramble some of my eggs as a side.

You just triggered a memory for me. Our bank president's wife told me that they went to a dinner party and the hostess was serving spaghetti. However -- when she drained the noodles, the lid slipped and all the noodles went down the drain. This creative lady used the French bread she had on hand and served the sauce over the bread.

I love Italian food. MIL used to make both ravioli and gnocchi from scratch. She showed me once how to make gnocchi. I buy both ravioli and gnocchi frozen and they are pretty darn good. I do make my own sauce, then again using jarred sauce isn't a crime. Glad you were able to celebrate his specisl day with family!

I think a lot of possibilities have been brought up and I wouldn't know how you could narrow it down. I just hope it doesn't happen again. You mentioned watery diarrhea. My son is allergic to peanuts and his reactions have been gastrointestinal. I didn't know he was reacting at the time but in hindsight, after learning a few things about allergic reactions, I should have been tipped off because of the consistency of the vomit and diarrhea. It was very liquidy. At the time, I couldn't understand where it was all coming from since usually a child will only vomit what he has in his stomach but in an allergic reaction, your body keeps producing more of something (histamines???) and this is what was coming out of Nick. So based on the timing and the consistency of the diarrhea, I don't think you can rule out some type of allergic reaction.

Sorry I havent posted my computer crashed from a virus from FACEBOOK!!!! SALLY2: Pernil is a marinated Puerto Rican Pork Shoulder that I marinate 2 days with garlic Sazon w/Annatto and homemade Sofrito, Pink Beans are soaked and cooked with smoked ham hock and cut up potato. I wrote to Daisy Martinez Sunday morning...to my amazment she wrote me back from her Blackberry. Reference the Yucca fritter....frozen Yucca has to be grated and strained through a cheese cloth overnight to remove liquid to prevent the "birds nest effect! She's one cool Latino!

How cool that you got instructions from an expert in how to keep that from happening.

Magnifico! Your report brought back memories from long ago when I prepared a Mexican meal for the last session of a small Spanish class which met at my home. We had several small tables set around the living room cafe style and a fire in the fireplace since it was winter. The food combined with the congeniality of the group made it one of the best occasions I ever hosted. I would like to have attended yours.

Thruth be told as you most know i cook for family and friends on a regular basis. I never have a small crowd and often laugh at the fact that I have beautiful china and crystal service of 12 and never get to use it because I have too many guest all the time. I use it for my childrens birthday (private dinner) and Valentines and the kids love to sit at the fancy dining room with the "fancy dishes". I enjoy cooking everything but I must admit I get the most pleasure when serving "different" meals oppose to the standards. I love to introduce people to new foods and cultures that they normally on a staple wouldnt cook at home. I should say basically "THEMED MEALS". I think next will be a host of old fashion SOUTHERN or CAJUN food night. Im also looking foward to a GREEK themed dinner maybe when the weather cools down. The setting is always good to think about...you dont have to spend alot of money to play the cultures music or use even paper goods in colors of the country. When I did latin night I had Latin Music and Spanish Saint Candels burning around the house...just adds to the atmosphere. Anyone do these type of get togethers???? Id be interested to know what you use for atmosphere and bringing a theme together. Also what "CULTURE" dinner have you hosted?

Your Latin menu sounds wonderful! Would you mind posting the recipe you use for Pernil? I've always wanted to find a great recipe. Makes my mouth water thinking of it. :)

Well, maybe. I don't do themed music, but the first couple of times we had our Canadian friends down for American Thanksgiving, I went all out with truly American foods. Lots of old Southern, especially, since I knew they had never had such stuff. It's fun to do it!

I love to plan themed dinner parties too! Mine are a little more simple than others posted here, but simple suits me.

Tapas night can be a lot of fun with a number of small dishes, lots of sangria and a good bottle of Spanish sherry to keep it authentic. Garlic shrimp, banderillas (on picks), tortilla, olives, almonds, manchego cheese, and other typical foods are always part of the menu. I pull out my pieces of pottery to serve from and put on Spanish guitar music.

My sons are adventurous when it comes to trying new foods, so there are times when I make an all oriental dinner combining foods of various cultures. I love to make chicken satay, egg rolls or spring rolls, fried rice, shrimp and snow peas, lo mein, pad thai, and stir fried dishes.
