Spinach & Ricotta Fritata
8 eggs
1/2 cup milk
1/2 cup bread crumbs (I used a slice of sandwich bread)
3/4 cup Ricotta Cheese
Pinch Ground Nutmeg
Salt & Pepper to taste (I used 1/4 tsp pepper & 1/2 tsp salt)
1.5 cup frozen chopped spinach
2 TBSP butter or olive oil
Put eggs, bread, milk, ricotta and all liquid and spice into blender jar and blend until fully mixed
Saute frozen spinach in non-stick 10/12 inch pan with butter/oil until spinach is no longer frozen
Pour egg/ricotta mixture over spinach in fry pan and leave on stovetop until edges are set
Put pan in 325F oven 25-30 minutes until done (eggs are completely set)
