Wow Glenda! Those look really yummy. I'm sure everyone will like them. While I don't care much for eggs, if your spinach squares were sitting in front of me I wouldn't be able to resist them.

Thank you! I made these earlier tonight, but I had to do a bit of changing of the recipe...I know some of you HATE this, but I had to work with what I had. I had Caryn stop at the store on her way for Sunday night supper to pick up a box of spinach, she didn't know spinach was in a box and it was frozen...so she got a bag of fresh. I chopped it up and put it in the micro for just a bit to soften/cook it.

All in all...it came out great, and we all liked it! I did add the onions like you, Glenda...we eat ALOT of onions here. I can see where you could do alot with this recipe...adding some finely chopped ham, more eggs, etc.

THANK YOU for sharing this recipe. I can see this becoming a standard in our house.

I saw this picture and read the recipe right after I go to work this morning and....I've been hungry ever since!!! I just can't wait to get home and make these spinach squares. They look so yummy and my tummy is screaming out for one...at least one...lol. Everyone in my family loves anything with spinach in it, so I'm sure this will be a big hit. Thank you, Glenda!

I made these things the other night for me and hubby and he ate HALF the recipe!! I made it the next night and he did the same thing. Needless to say, they're a big hit. Thanks for posting this recipe.

Do these reheat well?

I served them at room temperature, for ladies luncheon this month.
I'm sure you can wrap them in foil, and reheat at 350 until warm.
They freeze well, also.

Don't post here often but had to comment on these. Spinach Cheese Squares are a HUGE hit in our family. I've been making them for years. I like to add garlic too (we're a big garlic family).

We have a get-together once each year with all the neighborhood ladies and I'm always asked to bring this dish. I usually make two or three batches and they'll all gone each time!

And yes, they do freeze well.

I made them, and now will keep all the ingrediants in the house as staples. Yummy!!

I have a recipe that's similar, but uses bisquick and has garlic and a little Parmesan as well.

Have used it many times with my kindergarten/1st grade cooking classes. They all turn their noses up at the idea of eating spinach, and I tell them that by the end of the class 9 out of 10 of them will LOVE the recipe we make. And everytime, it works out that way. Once they try those, only 1 or 2 of the class decide they don't like them, the rest gobble them up (I sometimes have a hard time rescuing a few for the secretary--who begs for them every year--LOL).

Here's a suggestion--if you make them for kids, try reading the book, "Now I will Never Leave the Table" with them--it's a cute book about a little girl who doesn't want to eat her spinach.

I just put Spinach on my grocery list. I do more snacking than real meals, so that should work great, plus a sneaky way to eat spinach!.

I have a question, though....do you really use an entire stick of butter, or just enough to grease the pan? Just seems they'd be horribly fattening with that much butter.

Yep, the whole stick! These were wonderful. I've got some in the freezer. I hope they taste as good re-heated as they did when they came out of the oven.

Here's one for a spinach pie!
Can't see how crust would work with the squares.
This one looks easy enough!

SPINACH PIE

1 (10 oz.) frozen pie crust
1 (10 oz.) frozen chopped spinach
1 egg
1 (8 oz.) Mozzarella
4 oz. ricotta
4 oz. feta (optional)
1 sm. chopped onion

Preheat oven to 375 degrees. Brown pie crust for about 5 to 10 minutes. Squeeze the excess water out of the defrosted chopped spinach until dry. Mix all the ingredients above and pour them into pie crust and cook for about 35-45 minutes until golden brown on top.
You can use more or less of the cheese depending on how cheesy you like it.

I made this with the whole stick of butter, and will try it another time with only 1/2 stick of butter, or less. I think it came out tasting just like butter -- no spinach or cheese flavor. I think I'll up the cheese., too.

hmmmmm, guess tastebuds are different! I could taste the cheese and spinach, and no buttery taste.
