freeze ahead breakfast casserole

I'll have houseguests for a few days this summer, and want to have good food, with little time spent in the kitchen. I have a few breakfast casseroles we like, but have no idea how they do frozen. Ideally I could thaw them a day or two in fridge, then just stick in oven. I'll give you a rundown on the two I have, but I'd love to hear of any known to freeze well. Gluten free bread can work in some casseroles.

Butter a 13x9 pan. Cut and sprinkle in pan: thawed frozen hashbrowns, ham, cheese, onions, peppers, salsa. Scramble eggs w milk, salt & pepper. Pour eggs into dish. Bake immediately, or let sit in refrigerator overnight.

Blueberry Cornbread Pudding - like regular bread pudding, but with g-f cornbread and dried blueberries. (Don't use sugar in pudding, berries are sweet, and you want to top with maple syrup.)
