Can I freeze casseroles containing eggs?

I want to do this frozen breakfast casserole for a church fundraiser and am hoping you can help by telling me if it will freeze all right? If so, I'm assuming it should be baked and then reheated? This is the recipe I want to use. Thank you so much.

Ingredients

* 12 slices bacon

* 1/4 cup butter, melted

* 3 cups croutons

* 2 cups grated Cheddar cheese

* 6 eggs

* 1 3/4 cups milk

* 1 bell pepper (any color), diced

* 1 tablespoon prepared mustard

* salt and pepper to taste

Directions

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 325 degrees F (165 degrees C).
Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

I don't know that you'd gain that much by freezing ahead.
Unless you need to make a lot of them.

I freeze my crustless quiche all the time (after completely cooking), but it has a little flour mixed with the egg base.

Do you have time to test it? Make a full recipe, but put a quarter of the ingredients in a smaller pan. Cook and freeze. Eat the rest! Thaw in a couple of days to see if you're happy with the texture. If not, you can always make "kits". Cook and crumble the bacon. Measure the bacon, the cheese and the croutons into separate bags. Mix up the egg mixture and store. Then the day of the fundraiser, all you need to do is melt the butter, layer and bake. It's probably actually faster than allowing for thawing time and additional bake time to reheat.

I also would do like deanna said...it will keep made up in the refrig over night...if you need to keep longer than that....I would re think doing that recipe.

Tee! Hee! Those milkweeds are pretty tough plants. They've probably been there a long time. I still probably would have dug up about 3 of them to move them closer to your backyard, so they could be watered regularly during the summer. Usually, there are enough roots in a med sized clump to take over when the long taproot is severed. Be very careful in transplanting young milkweed plants and seedlings. If that taproot is broken off, the plant is a goner. Tropical milkweed is not like that. I think that your cuttings will do very well with this cooler weather. I like to use the square Ziploc containers. Drill holes into the top of the container the size of the stem. Cut a square of water oasis about half the depth of the Ziploc container. Stick it into the container, fill with water, and let the Oasis soak up the water. Pour off the extra water. Don't want water coming up thru the holes, or the Cats could drown. The Oasis really helps to hold the stems up, as well as keeping the milkweed stems moist when it is so hot in the summer, and the water evaporates. Then, you can put your containers in your new Butterfly cage! Do you have room in your home? Several people here use the Florists water piks to put the milkweed stems in. It will work for small stems, but needs to be checked frequently to see if water needs to be added. I have stuck the water piks in a container of sand to stand them up. Some folks use small vases with the tops covered with saran wrap, and holes poked for the stems. Won't be long, and Amber's going to have some Monarch cats!!! Keep us posted.

This is a Cooking Light recipe that has become a standard at our house. I have not frozen it, but I don't see why it wouldn't work to freeze it. I've taken it to events where I needed a vegetarian option -- for breakfast, lunch or dinner. I usually use the whole can of black beans, a generous cup of salsa (I use Pace medium and will measure more generously if using the thick and chunky). I also tend to add another egg and/or egg white to have enough to cover it all. It will fill a deep pyrex casserole that is almost the size of a 13x9. Breakfast Tortilla Strata 1 cup bottled salsa 1 cup canned black beans, rinsed and drained 10 (6-inch) corn tortillas, cut into 1-inch strips Cooking spray 1 cup (4 ounces) preshredded reduced-fat Mexican blend or Monterey Jack cheese, divided (who measures? ;-) ) 1 cup low-fat sour cream 1 cup fat-free milk 1/2 teaspoon salt 2 large eggs 2 large egg whites 1/4 cup thinly sliced green onions (optional) Combine salsa and beans in a bowl. Place one-third of tortilla strips in an 11 x 7-inch baking dish coated with cooking spray. Top with 1/3 cup cheese and about 1 cup salsa mixture. Repeat procedure with one-third of tortilla strips, 1/3 cup cheese, and remaining salsa mixture; top with remaining tortilla strips. Combine sour cream and next 4 ingredients (sour cream through egg whites); stir with a whisk. Stir in onions. Pour over tortilla strips; sprinkle with 1/3 cup cheese. Cover and chill 8 hours or overnight. Remove casserole from fridge and preheat oven to 350ÃÂ°. Remove cover and bake. My recipe got cut off here, but I think the original instructions said 45-55 minutes. Mine always takes a bit over an hour and it seems most folks cook an hour to an hour and 15 minutes depending on the type of baking dist, depth of the strata, etc. The top should be a bit browned and the center just set. If you have folks with no heat tolerance, use a mild salsa in the strata, You can serve with a spicier salsa and sour cream on the side for folks to dress to taste. I have made this with nonfat plain yogurt instead of sour cream -- works fine.

You can save a bundle making 'homemade great start' breakfast meals in advance when eggs, bacon or sausage are cheap. Just cook them as usual, freeze, then nuke your creations when desired and presto, a hearty breakfast. Here's what I do, make a batch scrambled eggs or french toast or pancakes, fry up a pound or two of bacon or sauage and make home fries. Then arrange the food on individual plates or containers with those snap & seal disposable plates (Hefty snal & seal plates for example) and voila, 'meals on wheels'. Perfect for those times when you don't have time to cook. You can nuke these babies just like a store bought 'great start' with the added benefit of knowing the ingredients. Breakfast burritos are wonderful too, just scramble those eggs with some pieces of shredded ham, green peppers, onions and mushrooms or whatever your heart desires, divide your cooked concoction amongst the tortillas, roll 'em up, wrap them in plastic wrap then pop them in the freezer. Their ready to go when needed. All previous posters are so right about buying eggs when inexpensive. If you want to just freeze eggs, scramble an egg then pour it into one section of an ice cube tray, 12 eggs will fill the tray. Pretty simple and handy to use when eggs sky rocket in price.

Leah, I dislike freezing foods in foil, too. Especially casseroles that contain acid food such as tomato. It may be o.k. but it worries me. Besides that, I have only a few casserole dishes and don't want to store them in the freezer. So what I do is prepare the casserole - either precooked or not depending on the recipe - in the dish I prefer. Then I freeze the food in the dish until it is firm. At that point I can remove the food and wrap it or even vacuum seal it without the dish, which I can continue to use. When I want to use the frozen casserole I can just match it up to its original dish and proceed.

I'll test it first, Deanna. Lindac, you're saying you wouldn't use this recipe because of problems with the texture after being frozen? And yes, I do need to make lots of them. The idea of this fundraiser is that they will be purchased frozen as a "holiday helper" to be cooked/reheated later during the busy season. Thanks to you both!

Here is a post from the Once a Week Cooking Forum on freezing a casserole very similar to the one you want to use. I would still try a partial recipe and freeze it to see what you think, but it sounds as though you will be fine with your recipe. I think it's a wonderful fund raising idea. The thread where I found this is linked below.

I found it: anyone interested:

4 1/2 c. seasoned croutons
2 c shredded cheddar cheese
1 medium chopped onion
1/4 c. chopped sweet red ppper
1/4 c. chopped green pepper
1 jar (4.5 oz) sliced mushrooms, drained
8 eggs
4 c. milk
1 t salt
1 t ground mustard
1/8 t pepper
8 bacon strips, cooked/crumbled

Sprinkle croutons, cheese, onions, peppers and mushrooms into 2 8-inch greased square baking dishes. In a bowl combine the eggs, milk, salt,mustard and pepper. Slowly pour over vegetables and sprinkle with bacon.
Cover and freeze one casserole for up to 3 months. Bake the second, uncovered, at 350 for 45-50 minutes, or til knife comes out clean. To use frozen: Thaw in fridge for 24-36 hours. Bring to room temp for about 30 min then bake. Bake uncovered at 350 for 50-60 minutes or til knife comes out clean.
Makes 2 casseroles (6-8 servings each)
