Char Siu Sauce

I just saw a recipe (Chinese-based) that called for Char Siu Sauce.

Has anyone used it, and do you know if it's readily available?

Can you tell me what the flavour would be similar to?

I have Srirachi sauce so I'm like heat and spice.

You make it...it's a fairly sweet Chinese BBQ sauce...as with any BBQ sauce there are many recipes....And if you live in the right spot you may be able to buy it bottled.

Hi Jasdip --

I was just going to say that the closest thing to Char Siu sauce would be something like Hoisin sauce, but with a whole bunch of honey added to it along with some five-spice powder... And then I opened Linda's link and saw that's essentially what they recommend! I am able to buy the Lee Kum Kee brand of Char Siu sauce in my local asian markets as well as in my supermarket. Here's what the jar looks like:

I make a lot of refrigerator salsas, and use little vinegar, mostly Goya Bitter Orange juice, like is used in the Oaxacan habanero salsas. This is my current favorite. 2-cups dried Numex Suave Orange habaneros 5-dried Ghost peppers 1-small onion, sliced thin 2-medium carrots, sliced thin 6-cloves garlic, smashed 1-teaspoon white pepper 1-tablespoon table salt 1-1/2 cups Goya Bitter Orange juice. 1-cup water, maybe more Put liquids in blender, add salt and white pepper, and all dried chilies. Process until smooth. Do this first so they can start reconstituting. Preheat oven to 425 and place rack in next to highest position. In a large bowl, toss chopped onion, carrots, and garlic in a little olive oil. Spread parchment paper on a baking sheet, and spread veggies evenly over it, place in oven, and roast for 20-25 minutes or until some charring takes place on the onions. Remove, and let cool for five minutes. Pick up parchment paper, and funnel veggies into blender and process until smooth. You may have to add more water if it gets too thick Taste for seasoning, and store in fridge. This lasts me about a week or so. You can also use fresh habs and ghosts sliced in half and roasted with the veggies, but it does require a good vent hood on your stove. Damn, forgot to add the pic...

FOAS, the last batch of my char siu bao I used a recipe from a book "Dim Sum, The Art of Chinese Tea Lunch" by Ellen Leong Blonder. When I first saw the book I was not impressed with the cover and presentation. It has that kind of humble appearance that doesn't attract one's attention immediately. After reading the book and trying out a couple of recipes, I became very impressed. As always, I modified her recipes for my own convenience. This is what I did for a bao dough: Make a sponge: 2 tsp active dry yeast 1 C lukewarm water 1/2 C sugar 1-1/2 C cake flour (I used part unbleached** and part cornstarch to make 1-1/2 C of flour mix) The recipe suggested proofing the yeast in warm water for 10 minutes prior to making the sponge, but I skipped this part. I knew my yeast was good so no need to do that. I simply added everything together, stir to smooth, let sit in a warm, draft-free place for an hour. To make the dough: 1/2 tsp salt 1 T rice vinegar (I used white vinegar) 2 C cake flour (once again, I used unbleached**/cornstarch mix), plus about 1/4 C for dusting the board 1 T baking powder 1/4 tsp baking soda (I skipped this) 1 TBSP vegetable shortening (Traditional Chinese buns used lard; I had some so I used it) ** If you don't want yellow-ish buns, you may want to use AP flour instead of unbleached. Even AP flour won't give you that bright white Chinese buns we see in restaurants, but AP flour definitely will produce whiter color than unbleached. For very white buns, you will need to use special flour i.e. Hong Kong flour, for the best results.** Stir the salt and vinegar into the sponge starter. In another bowl, sift together the 2 C cake flour (or the flour mix), baking powder, and baking soda (none for me). Stir the flour mixture into the yeast mixture. When combined, add the shortening (lard) and work it in with your fingers. The dough will become a sticky, somewhat shaggy mass. Turn the dough out onto a well-floured board and knead it for about 15 minutes, or until smooth, adding flour as necessary. Grease a clean, large bowl with a little shortening, place the dough in the bowl, and cover it with a damp cloth or plastic wrap. Let it rise in a warm, draft-free place for 1 hour. (If you have made a bao filling ahead and refrigerated it, take it out now to let it come back to room temperature.) Lightly punch the dough down, and then proceed to shape the dough for wrapping. This recipe will yield 18 large or 24 medium buns, depends on the size you want. Placed wrapped buns on wax paper (2-3 inch squares), at least 1" apart, in steamer (I used bamboo) and let rise for 30 minutes. Bring the water in the steamer to a boil over high heat. Steam a single tier of buns at a time (I used two tiers together), over high heat for 12 (15 for me) minutes. Repeat 2 or 3 batches, if you steam one tier at a time, until all buns are steamed. Serve hot. I've built a unbleached flour sourdough starter last week and this morning it looked ready. I am playing with it now to see if I can make sourdough char siu bao with unbleached/rice flour. So far the dough looks very soupy. I am not going to add more flour until the dough has risen to double. If in four hours the dough is still spongy I will add more flour into it. Since this is sourdough, it will take 7-8 hours to get the dough ready. Probably won't know the outcomes until tonight. Now I'm in the mood for pork! For a quick dinner I like Char-Siu sauce - it's a molasses based chinese bbq sauce (I don't have any right now so I can't check the ingredients or the spelling but I've approximated it before with soy, molasses, ginger and garlic). Great with cole slaw. If I have more time I like this recipe from Betty Crocker - very flavorful! Caribbean Pork Roast 1 pork boneless double center loin roast, 2 to 2 1/2 pounds 1 cup orange juice 1/2 cup lime juice 1 1/2 teaspoons ground cumin 1 1/2 teaspoons red pepper sauce 3/4 teaspoon ground allspice 1 medium green bell pepper, cut into eighths 1 medium onion, cut into fourths 4 garlic cloves, crushed Salt and pepper to taste 1 1/2 teaspoons sugar 1/2 teaspoon salt 1. Remove fat from pork. Pierce pork deeply all over with meat fork or skewer. Place pork in heavy resealable plastic food-storage bag. Place remaining ingredients except salt and pepper to taste, sugar and 1/2 teaspoon salt in blender or food processor. Cover and bend until smooth. Pour blended mixture over pork. Seal bag; place in dish. Refrigerate at least 4 hours but no longer than 24 hours, turning bag occasionally. 2. Heat oven to 325ºF. Remove pork from marinade; refrigerate marinade. Sprinkle pork with salt and pepper to taste. Place pork on rack in shallow roasting pan. Insert meat thermometer so tip is in center of thickest part of pork and does not rest in fat. 3. Roast uncovered 1 hour 45 minutes to 2 hours 15 minutes or until thermometer reads 155°F. Remove pork from pan. Cover and let stand 15 to 20 minutes or until thermometer reads 160°F (medium doneness). 4. Pour marinade into 1 1/2-quart saucepan. Stir in sugar and 1/2 teaspoon salt. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes, stirring occasionally, until mixture thickens slightly. Serve sauce with pork.

<Does anyone know whether you can toast (char the skins a bit) of the peppers before chopping for the fermentation? Years ago I made an unfermented roasted pepper sauce that was very good.> I don't know of any fermentation recipes that call for pre-charring. Doesn't mean there aren't any though. But just a word of caution - there are hundreds of fermentation recipes and books floating around out there that are unsafe. And I don't just mean unsafe per the USDA guidelines. They are very risky well beyond the guideline restrictions. So reader beware and if not experienced with the process stick with tested and approved recipes. My main concern with the roasting, and this is just speculation on my part, is that it would kill the beneficial bacteria so might delay the fermentation process and it would clearly change the flavor. <My question is can I really let this go longer without it actually rotting or is it done??? The initial burst of fermentation was probably because of the added sugar but is it still fermenting now? How do I know when fermentation is over? How does the flavor change perceptibly as it ferments longer? What should I be able smell or taste? How is 'aging' different from fermenting?> Bottom to top - aging something does not normally include salt. It is a process of time and exposure to air of a specific temp in a controlled environment. You know when it is done/over (after the 7 days recommendation) when it tastes good to you, when it has the flavor you want. I know that sounds vague but fermented foods really are a matter of taste. Some folks want their kraut or pickles only fermented for 7-10 days as they don't care for the stronger taste that develops. 2-3 weeks is the minimum for my tastebuds but others prefer the flavor of 6 week old kraut and 6 month old pickles. So how that flavor changes depends on the brine strength and the ingredients you use but most of all on YOUR tastebuds. Until you add vinegar to the mix (if you do) then yes it is still fermenting and will continue to do so even when refrigerated. it will continue as long as you let it. It does not rot. It does not spoil as long as it is refrigerated once the majority of the fermentation is done. The worst that can happen is it may develop a layer of yeast scum from air exposure. That you just keep skimmed off regularly. This is all assuming you have used a safe level of salted brine to begin with and therein lies the risk. In this world of low-salt diets folks keep trying to reduce the amount of salt used. Do not do that and avoid those recipes calling for what seem to be low levels of salt. I so strongly encourage anyone who wants to get into fermenting on a regular basis to by a copy of Linda Ziedrich's The Joy of Pickling as it covers in detail all the basics and charts out all brine levels that are safe to use. With that knowledge you can then safely expand your fermenting horizons. Dave

I make char siu so infrequently, I end up using the Noh packaged mix. I really like it because it isn't sweet and thick like the bottled ones.

When I have to made ethic dishes, often I use Google Translate to do a backwards foriegn language recipes search. You may find a more authentic way of making the dish. Here is what I found. A little clumsy in the translation. You can try for more.

This thread got me jonesing for char siu so I headed off to a new Asian market close by. OMG! It is huge and the selection is mid numbing!

I found both the jarred sauce and the dry packages mentioned in this thread plus picked up a ton of stuff that I have no idea what to do with like frozen rice pasta sheets! LOL

Tomorrow I'm cooking Chinese!

For what its worth, I can't imagine making Char Siu using a powdered base... To me part of the key to the dish is the glazing and caramelizing of the meat. Even the thicker sweet sauces don't wind up tasting that sweet, since some of the sauce slides off with the fat during cooking.

Also, here's a link to by far my favorite recipe for Char Siu -- the very closest thing I've ever made to what I get in chinatown in NYC... I use strips of pork shoulder though, where this recipe talks about loin... The recipe and instructions are across several posts, all from the commenter named hzrt8w...

I got that authentic Chinese restaurant eye-popping red char siu. The secret was an authentic Chinese restaurant ingredient. Red food coloring.

The next night, I managed a very similar red color sans the red dye, by adding lots of roasted and Cuisinart'ed beets to the marinade, basting occasionally during roasting with more marinade, and coating the roasted and sliced pork with the reduced marinade. So you don't actually need red dye to get that ''lucky'' red char siu.

The beets add more sweetness, which actually was not as popular with the family as the earlier, more savory version.

I believe a more traditional way to get redness involved red fermented soybeans, which I interpret as red miso, but I have not tried that. It would probably taste good.

We had the beet-red char siu plus some pork belly and yet another attempt at xiao long bao as appetizers. Main was some slow cooked beef shank with lots of gravy. Sides were roast potatoes which I managed to blacken under broiler (drinking when I should have been cooking) and some sugared and roasted carrots. Because only half the potatoes were salvageable, my second batch of ciabatta, with Irish butter, was pressed into service as the starch.

A fun dinner, but I'm looking forward to fresh spring veggies and fruit, al fresco dining, and a change from the heavily cooked and reduced winter dishes of which I'm getting tired. The next dinner's gonna be raw oysters, ceviche, pesto a la trappanese, lots of fruit, and sangria. If I have to wait until July.

Looks delicious! Have you had any luck with Xiao Long Bao? They are my absolute favorite, but I've tried two or three times, once including making my own wrappers, and every time all the soup has leaked out of the dough. Do you have any magic technique to pass on?

I do not (have the magic). My broth either seeps out through the dough, or soaks into it, so that I end up with either a deflated bao or a tasty but squishy bao without the right ratio of broth to wrapper. Because xiao long bao is supposed to be all about the broth. You dont want to be chowing down handfuls of bao just to get 10 cc's of broth. The broth to bao ratio should be more like a water ballon.

I am fairly convinced that I'm missing some trick with the dough or the steaming - perhaps I am making the dough too thick so that they require too much steaming, or maybe I need to knead it more to develop gluten, or maybe the dough is supposed to include oil, or perhaps I'm just not getting the incantations right or not offering the right human sacrifices.

I am going to try again soon, and be more scientific about it - make five xiao long bao one way, five another way, and so on.

Here's why I have to get it right, and soon. Our friend is about to start an intense regimen to lose 15 lbs. It is interesting. She is 60 y/o, an awesomely beautiful woman - and notice I did not say ''for her age'' - and she's been doing some modeling. We think of modeling as a young person's gig and for the most part it is, but the ad agencies want older people too. But naturally they won't settle for normal older people, they want ultra-slim radiantly gorgeous older people. We're all supposed to look like Katharine Ross when we're getting our first smartphones at 60 y/o, you know? Anyway, to get back to the subject of food, when she finishes her regimen, we're supposed to celebrate with a beef tongue dinner. I really want to have my xiao long bao appetizer well figured out by then. Because, you see, not only is SWMBO is well aware of my infatuation with She Of The Beef Tongue, SWMBO has ratted me out by telling her friend that I have a crush on her. Talk about betrayal! Hasn't she ever heard of the legal doctrine of husband-wife privilege? So now I have to watch how much I drink around SOTBT lest I get caught openly staring. Which means I need something very distracting and non-alcoholic. Which a good xiao long bao certainly is. Not that mine are, but here's to never giving up.

I went to Google translate to translate "xiao long bao" to Chinese. I then copy the Chinese to youtube to find out how the Chinese do it.

Apparently the dough is very high gluten and the way they roll the wrapper makes the center thick and the edge thin.

I am impressed with your dedication John -- I was so frustrated after my attempts that I vowed never to try again... But now that video from dcarch is making me long for them! The last time, when I made my own wrappers, I did make the edges thinner and the center thicker, but to no avail. Sigh.

translate "xiao long bao" to Chinese

''xiao'' is ''small''

''long'' is ''basket or cage'', here meaning the little bamboo baskets in which dim sum is often served.

''bao'' means ''bundle, wrapper'' or the action of doing so.

Interestingly, in menus the wrong character is often used, namely the version of ''long'' that means ''dragon''. That character omits the bamboo radical at the top. I guess it is simpler and phonetically close enough, and any Chinese-speaking person knows what it means anyway, so why not. It is confusing to me, though.
