Impulsive Substitutions...successes and failures!

Yesterday, I told my husband I would make pancakes for breakfast. I didn't feel like plain ones, and I didn't have any suitable fruit.

Soooo...I substituted coconut milk for the milk, and added a half a cup of toasted, sweetened coconut to the batter of a basic pancake recipe.

The batter came out thicker than usual, so I sort of had to spread it once I put it into the pan (coconut milk being so much thicker than real milk).

OMG! They were good! Light and rich at the same time, tender and moist. I don't have much of a sweet tooth, so next time I will probably try using unsweetened coconut, but my husband (who does have a sweet tooth) loved them the way they were. I had some dipped in a wee bit of real maple syrup, and some topped with my meyer lemon marmalade, both yummy.

Some of these impromptu substitutions work better than others (I know I have made some very poor choices;P), anyone have stories?
