Freezing cup cakes, need advice

Again this year for a St. Patrick's Day party, I am making Smitten Kitchen's "car bomb" cupcakes made with Guiness with an Irish whiskey ganache filling, and Bailey's Irish cream frosting. They were a hit last year.

However, this year, I do not have time to do them the day before the St. Patrick's Day party. The instructions say that they can be made a couple of weeks ahead, filled, and frozen. I intend to do just that. Then I will frost them the morning of the party.

I'm not very knowledgeable about "do ahead and freeze" techniques. Can those of you who do this often give me any pointers? I don't want my cupcakes to taste "off" or stale.

Also, is there a best method for thawing?

The recipe is too long to post here. If you've never made it before and want something super for dessert, I would highly recommend it.
