advice on cake needed!

Hi everyone. My boyfriend's mom's birthday is tomorrow so I want to make her a cake. I've been lazy and haven't really made cakes for many people this year!

I wanted to do a carrot cake but he told me she's picky about carrot cakes and she likes chocolate cake a lot. I think HE likes chocolate cake a lot (versus carrot), but that's a whole 'nother thang! The thing is, I want to write "Happy Birthday Joyce" in the cake and I don't want to do that on chocolate icing (I can't imagine that looking good). Would butter cream frosting go on a chocolate cake, or is that a bad thing to do? Just wondering how it would taste. Should I stick with chocolate on chocolate and just use yellow or white icing to write or is that tacky?

Also... the last time I colored icing, it looked pastel. I wanted deep colors this time. Do I just use a lot more food coloring, or should I buy some different food color instead of the liquid drops I have now.

Thanks for any advice. If the cake turns out presentable AND I buy a digital camera tomorrow, I'll post a pic!
