Looking for Good Blue Cheese Dressing Recipe

Anyone have a really good Blue Cheese Dressing recipe? They changed the one we used to get and I can't find one that's good.

Years ago I tried a blue cheese dip for veggies.
I'm not crazy about blue cheese but it was very tasty so I fooled around and ended up with this for salads.

Blue Cheese Dressing for 2

2 oz. cream cheese, room temp.
1 T. blue cheese
dash Worcestershire (~ scant 1/8 tsp.)
dab prepared horseradish, to taste
1 T. plain yogurt

Mash cheeses together with a fork. (I use a bread and butter plate). Smash in remaining ingred. and swipe off plate and over salads with rubber spatula.
(if too thick thin with milk)

My late husband was with the Maytag Blue cheese company...I collected lots of blue cheese recipes. Here are a few for salad dressing. DonnÂs Delight 4 oz Maytag blue crumbled 1 cup of mayo ( I use Kraft) 3 oz ( about 1/3 cup) milk or cream 2 tsps sugar 2 tsps dried parsley 1 Â½ Tablespoons lemon juice 1 Â½ Tablespoons cider vinegar 1 Tablespoon fresh grated onion 1 Tsp Lee and Perrins worchestershire 1 tsp horseradish Â½ tspoon garlic powder. Mix gently so as to leave some lumps, and serve over a green salad or on sliced tomatoes or cukes and onions or as a dip for raw veggies. Serves about 6 to 8 Fran's Zesty Blue Cheese Dressing 4 oz Maytag Blue cheese 1/2 cup olive oil 1 tsp grated lemon peel 1/4 cup fresh lemon juice 1 clove of minced garlic 1 cup sour cream. Mash cheese and oil together with a fork until creamy and smooth, add rest of the ingredients and mix well. Makes 2 cups. Rosy Blue Dressing 1 small onion 1 cup mayonaise 1/3 cup olive oil 3/4 cup catsup 2 T cider vinegar 1 tsp Dijon mustard 2 Tablespoons sugar 3/4 teaspoon paprika 4 oz Maytag blue cheese crumbled Put all but the cheese in a food processor and blend until mixed, add blue cheese and pulse to crumble. Nope I wouldn't add it either. This is Tami Ohio's recipe I've made it lots. I make this with chicken, but you could certainly use turkey. It's good! CHICKEN & STUFFING CASSEROLE Tami Ohio Serves about 4 4-5 cups chicken- cooked and removed from the bone ( about 4 boneless breasts) Break chicken up into pieces. If you are removing chicken from the bones, this is fine. Layer chicken pieces in bottom of dish. Combine: 1 c. milk 2 cans of cream of chicken soup - undiluted Stir together and pour over chicken Topping: 1 pkg. stuffing mix - cornbread or whatever flavor you prefer DO NOT mix according to box directions - follow these. Â½ stick melted butter or margarine 1 c. chicken broth Melt butter, mix dry stuffing mix into broth and butter. Spread over top of chicken mixture. If you use less chicken, use less soup and milk mixture, since you want it to make like a thick sauce. Stuffing will brown slightly on top. Bake uncovered for about 1 hour at 350Â° Recipe would be great for a large group and be easy to make. It takes less time if you cook the chicken the day before while cooking something else and refrigerate it. This makes the next dayÂs prep time quicker after work or for busy schedules. Add a salad or veggie and enjoy!

Real quick question: Which salads go best with blue-cheese dressings?

Well...it all depends on the blue cheese dressing....if it's a standard mayo based one...I like it on greens of course, and chopped vegetable salad of cucumbers, peppers green or colored, chopped sweet onion halved cherry tomatoes, some small pasta like orzo and some crisp greens mixed in. I like a more of a vinaigrette dressing with things like broccoli and cauliflower....and it's lovely on fennel and jicama salad, with some red peppers for color. I also make a very lemony blue cheese dressing....blue cheese mashed upw ith some lemon juice, olive oil and I forget what else....goes well on canned salmon and white meat chicken with lots of celery for crunch. Don't much care for blue cheese dressing on potatoes nor carrots....but I did have a recipe for blue cheese and carrots. I have a recipe for big fat slices of Vidalia onions in a blue cheese oil and vinegar dressing that is lovely....and goes very well with cucumbers too.

You might want to try several bleu cheeses before you make a dressing. The Danish tastes different from a Maytag and a French is different again. I am not saying that one is better than the other, but find a bleu you really like first.

I generally use Roquefort, and I make a very simple recipe:

1/8 pound Roquefort cheese, as fresh as possible
1 tbsp black pepper, coarsely ground
3-4 dashes cayenne
3-4 Tbsp freshly squeezed lemon juice (Meyer lemons preferred)
approx. 1-1/2 cups mayonnaise (Best Foods or HellmannÃ¢ÂÂs)

Break the cheese in a small bowl with a fork and add the lemon juice. Mix by hand--do not use a blender. If you like to have small lumps of cheese in the dressing, reserve some of the cheese to put back in later.
Add the pepper and cayenne and stir with the fork. Add cheese lumps at this time if you have reserved any and stir in carefully so that they will not become blended.
Add the mayonnaise - the amount you add will depend on how strong a Roquefort flavor you desire. I like it fairly strong, but no Worchestershire sauce.

Chill for at least half an hour before serving.

I have sometimes substituted part sour cream for some of the mayo, but normally I use all mayo for a salad dressing and part sour cream for a dip. If I use Bleu cheese instead of Roquefort, I increase the quantity a bit.
