??chicken and dressing recipe and cheese???

Saved the recipe that someone posted here.

Chicken, cream of celery and cream of chicken soup, with chicken broth, butter, and boxed cornbread dressing.

Made it, to take to friend, tomorrow, for them to cook, when they are ready.

Recipe calls for grated cheese on top, last few minutes of cooking.

I can't imagine cheese on top, so wonder if it is really necessary?

I've never seen dressing with cheese on top. Don't think I would add it.

Didn't buy cheese, but thought I would suggest when I deliver.

Cheese doesn't sounds like it was the best topping!

I ended up going with a chicken piccata. It was okay. I think I had too many browned bits (maybe they were too browned) or maybe it was the the rind in the lemon - the sauce was rather on the bitter side, unfortunately. My husband also came home with a $12 pie that was disappointing also from a bakery in the "high end" part of the city. A bunch of fruit, fresh/dried, poorly combined, too much cornstarch and underbaked crust. I really wanted a good food night, sigh, there's always tomorrow.

I generally use Roquefort, and I make a very simple recipe: 1/8 pound Roquefort cheese, as fresh as possible 1 tbsp black pepper, coarsely ground 3-4 dashes cayenne 3-4 Tbsp freshly squeezed lemon juice (Meyer lemons preferred) approx. 1-1/2 cups mayonnaise (Best Foods or HellmannÃ¢ÂÂs) Break the cheese in a small bowl with a fork and add the lemon juice. Mix by hand--do not use a blender. If you like to have small lumps of cheese in the dressing, reserve some of the cheese to put back in later. Add the pepper and cayenne and stir with the fork. Add cheese lumps at this time if you have reserved any and stir in carefully so that they will not become blended. Add the mayonnaise - the amount you add will depend on how strong a Roquefort flavor you desire. I like it fairly strong, but no Worchestershire sauce. Chill for at least half an hour before serving. I have sometimes substituted part sour cream for some of the mayo, but normally I use all mayo for a salad dressing and part sour cream for a dip. If I use Bleu cheese instead of Roquefort, I increase the quantity a bit. Lars

Thanks for the response, newbeginning. I don't think lemon juice and vinegar are 1 T. I read "1 Ã¯Â¿Â½ Tablespoons lemon juice" and "1 Ã¯Â¿Â½ Tablespoons cider vinegar". Not sure if other browsers will see the ? between the 1 and the Tablespoon, as I do. The measure for fresh grated onion IS 1 T. Note that "Tablespoon" is singular here. Not a serious problem. I agree that I can guestimate 1 1/2 for lemon juice and vinegar and 1/2 for garlic. Edited to add this: With suggestions from others, I changed settings in the View menu, as I explained in a later text. I can read the original, but this one turned into upside down ? marks. Weird. Here are my two favorite chicken recipes. LEBANESE CHICKEN Posted by: Linda_inTennessee (My Page) on Tue, Nov 25, 03 at 17:53 thought you might like this recipe I love lemon taste in my food List of Ingredients Yield: 4 servings 3/4 c Lemon juice 8 large Garlic clove(s), minced 2 tbs Thyme, minced or 2 tsp Dried thyme 1 tbs Paprika 1 1/2 tsp Ground cumin 3/4 tsp Cayenne pepper 2 Chickens (3 lb ea) Split lengthwise, backbones Removed and discarded Lemon wedges to garnish Whisk lemon juice, minced garlic, thyme, paprika, cumin, and cayenne pepper in small bowl. Place chicken in 13x9x2-inch glass baking dish. Pour marinade over; turn chicken to coat. Cover and refrigerate at least 6 hours or overnight, turning occasionally. Preheat oven to 425 F. Transfer chicken and marinade to large roasting pan. Season chicken with salt and pepper. Bake until chicken is golden brown and cooked through, basting occasionally with pan juices, about 50 min. Transfer chicken to plates. Garnish with lemon wedges. Pass pan juices separately. CHICKEN SAVOY 2 1/2- to 3-pound chicken, cut into 6 pieces (two drumsticks, two thighs, two breasts with wings) 2 tablespoons finely chopped garlic 1 tablespoon dried oregano Salt and freshly ground pepper to taste 6 to 8 teaspoons grated Locatelli or other Pecorino Romano cheese 1/2 cup red wine vinegar (preferably 7% acidity) In a 10 1/2-inch cast iron skillet or other heavy, oven-proof pan, arrange the chicken pieces skin side down and so that they do not touch each other. Sprinkle the chicken with garlic, oregano, salt, pepper and grated cheese, in that order. Place chicken in a preheated 500-degree oven for 35 minutes. Remove from oven and pour on all the vinegar at once. It should sizzle. Return the chicken to the oven for another minute or so. Arrange chicken on a platter and pour on the sauce created by the vinegar. Serve immediately. (Woodie's Note: I don't really use 500 degrees because my smoke alarm will go off, so I usually do 450 for 40-45 minutes, depends on which chicken pieces I'm using - we like dark meat the best. I also think that I use more vinegar, I don't measure, just pour it on, and I use any kind of vinegar, balsamic or red wine, doesn't really matter.)

Nope I wouldn't add it either.

This is Tami Ohio's recipe I've made it lots.

I make this with chicken, but you could certainly use turkey. It's good!
CHICKEN & STUFFING CASSEROLE
Tami Ohio
Serves about 4
4-5 cups chicken- cooked and removed from the bone ( about 4 boneless breasts)

Break chicken up into pieces. If you are removing chicken from the bones, this is fine. Layer chicken pieces in bottom of dish.

Combine:
1 c. milk
2 cans of cream of chicken soup - undiluted
Stir together and pour over chicken

Topping:
1 pkg. stuffing mix - cornbread or whatever flavor you prefer
DO NOT mix according to box directions - follow these.
Â½ stick melted butter or margarine
1 c. chicken broth
Melt butter, mix dry stuffing mix into broth and butter.
Spread over top of chicken mixture.
If you use less chicken, use less soup and milk mixture, since you want it to make like a thick sauce. Stuffing will brown slightly on top.
Bake uncovered for about 1 hour at 350Â°

Recipe would be great for a large group and be easy to make.
It takes less time if you cook the chicken the day before while cooking something else and refrigerate it. This makes the next dayÂs prep time quicker after work or for busy schedules. Add a salad or veggie and enjoy!

this is the one I made, for friend to cook when they need it.

Chicken & Dressing Casserole
1 chicken 3 cups

1 can cream of chicken

1 can cream of celery soup

2 cups chicken broth

1/2 cup butter or margarine, melted

1 package herb-seasoned stuffing mix, (8 oz)

1 cup shredded cheese

Cook chicken; cool, debone, and cut meat into bite-size pieces. Mix soups and broth; add chicken to the mixture. Add butter or margarine to dressing mix.

Combine chicken mixture with the dressing mixture.

Place in a 2 to 2 1/2-quart casserole and bake at 350Â° F. for 30 minutes. Top with shredded cheese during the last 5 minutes if desired.

This is the recipe I use when I am not cooking for a crowd...real southern style!!

SUNDAY CHICKEN & DRESSING CASSEROLE

Â½ cup butter
Â½ cup onion, chopped
1 cup celery, chopped
1 can chicken & rice soup
1 cup chicken broth
4 cups cornbread, crumbled
Salt and pepper to taste.

1 boiled chicken deboned and cut into bite size pieces.
(or use 5 chicken breast halves)

SauteÂ onions and celery in butter.
Heat broth and undiluted soups and pour over cornbread.
Add onions and celery & mix well. Season with salt and pepper.

Pour half of dressing mixture in greased, deep 2 quart casserole.
Add chicken and top with rest of dressing.

Bake at 350 for 50 to 60 minutes.

I've made a similar recipe using swiss cheese but it was under the dressing (and I used a regular bread dressing, not the cornbread variety). It was delicious but I don't think cheese is necessary on top of your casserole.

STOP!!! don't ruin a good recipe like that w/ CHEESE. Cheese has it's time and place, but it's not on top of dressing!!!

I'd add the cheese into the chicken/soup mixture, not on top.

I'm not big into recipes with canned cream soup but I noticed a lot of them call for cheese - maybe to cut the canned soup taste ;-) -- I don't see how it would hurt to add the cheese since cheese one of my favorite foods! Then again, it really doesn't sound like you would need it. The only thing I can think of is that it may be called for to help add some moisure to and help to keep the stuffing from appearing too dry on top. I've noticed a lot of the 'stuffing on top casserole recipes' (even the boxed dinner ones) do call for sauces (cheese or otherwise) on top of the stuffing. I'm sure you'll like it either way.

I have 2 versions of this recipe, 1 with mashed potatoes and one without. the one with the mashed potatoes calls for cheese,(just a sprinkling) the other does not.
