Adding sour cream/yogurt to hot sauces?

Is there a secret to keeping the sour cream from curdling or the yogurt from curdling & separating? I know you should take the sauce off heat and then add the sour cream, but I was wondering if there was something else you could do. Something like combining sour cream (or yogurt) with a bit of cornstarch or flour to stabilize the sauce/gravy.

And a related question: what if you have some sour cream enriched sauce left over? What's the best way to reheat it?
