Does this sound good?

I want to take veggies to our church potluck on Sunday. There's always an abundance of starchy casseroles and never enough "healthy" stuff in the winter.

So, this idea popped into my head this morning....

Saute' some onion and red pepper just briefly to soften and flavor a little olive oil. Remove the veggies.

Crank up the heat and toss in some frozen (and thawed) corn to sort of carmelize it.

Mix the corn, onion, pepper and some home canned green beans together, season with S&P and heat through.

I also have some fried garlic bits. They're like deep fried garlic crumbles, not powder, not slices, but rather "bacon bit sized". Use them or not?? Maybe a few on top? Or am I just getting too many flavors going on?

Suggestions? Other ideas? Add? Subtract?
