baking pan question...

I have a square baking pan that does not indicate its size, as some pans do.

The top measures 9 x 9; the bottom measures 8 x 8.

Which is it? I am baking brownies and the directions call for different baking times depending on the size of the pan.

I'd split the difference between the baking times.

Because of varations in individual oven temps, etc., things rarely take the exact time given in a recipe, so the best method is to use your judgment and a tester anyway. Just don't overbake them.

Bake until they are done....test with a toothpick.
The pan is an 8 by 8 pan.

I used my pan tonight for dinner. Mix up your cornbread recipe, put a little oil in each of the sections of the Jon'E Pan and heat it on the stovetop. Turn the burner off and pour the batter in to at least half full, leaving the pan on the stovetop burner while you add the batter. If you make the oil hot enough for the batter to sizzle when you add it you will have crispy bottoms and sides on the cornbread. Bake in 450 degree preheated oven for about 15 minutes or until cornbread is golden brown. I have had my pan for several years and use it often. The handle will not melt or warp. Everyone loves the cornbread because they all get crispy edges.

Needinfo: I have had a 48" for over 4 yrs now. I have not had any service related issues, but I have had an excellent brief experience with their customer service. Since I have the original style door I emailed them asking for the new door design with the new hinges even tho I have never had a sticking hinge on mine. Within 20 minutes of sending the email they sent an email back saying a brand new door is on its way. They sent it to me in canada via UPS which I know from a lot of experience UPS rapes on their "brokerage fees" to bring things across the border. BS picked up all the costs. I still have not installed the new door but I intend to at some point. My original style door does get hot. Not hot where you can not stand in front of it, that is just ridiculous, but at high temps the door will get hot enough that I would not plant my hand on it and keep it their for more than a fraction of a second (kind of like a hot dark coloured dashbaord on a summer day). Also note that the handle never gets hot, and the only reason I even realized the door gets hot is because I intentionally started poking around after reading the fuss on here. Chairthrower:(love the nick. Lol). I will also confirm that you will fit two half sheets no problem. One half sheet also fits in the small oven on the 48".

Recipe below. Natal, I've never had the need to flour a cake pan. Is there a reason to flour them? I also detest the taste of flour on a cake. Are the pans floured just to get the cake out of the pan? I usually don't do that, but if so, then I'll flour it tomorrow. Amy said to spray the parchment paper, so I'm going to do that just to be on the safe side. :) Red Velvet Cake 1 box White Cake Mix 1 small box Instant Chocolate Pudding 2 c. Milk 2 Eggs 1 small bottle Red Food Coloring 1/4 c. Oil Mix these ingredients well. Mix together 1 T. Vinegar 1 t. Baking Soda Add the above to the batter. Beat well. Bake in 2 round cake pans or a 9 x 13 cake pan, at 350. Frosting recipe below. Back to baking the cake, this is when it gets tricky. This cake can fall if you're not careful. For round cake pans, it generally takes about 20-30 min., until toothpick comes out clean. For a 9 x 13 pan, it could take up to 45-50 minutes. When the cake looks done, crusted around the edges, very GENTLY take it out of the oven and do toothpick check. I mean you have to be very gentle. I learned the hard way. lol. Frosting: 8 oz. softened Cream Cheese 1 stick softened Butter 1 t. Vanilla 1 lg. bag Powdered Sugar or to consistency..you want it thick but not too thick you can't stir it. Mix all together and spread on cooled cake. Sprinkle with coconut if desired. If you make a 9 x 13, you'll have a lot of frosting left, even if you put it on thick. And you want to put the frosting on thick! This cake is so rich & heavy and when you eat it you'll think you've died and gone to Heaven. No kidding! You'll see why it won a blue ribbon!

Thanks for the picture, Maddielee. It looks like what I actually have is not the correct insert, it's the top of a Tupperware grater (who knew that could happen?). Rusty, I have that GE refrigerator that I mostly like, french doors and a bottom freezer. However, anything in the bottom of the crisper drawers freeze. I've tried putting in blocks of styrofoam, those padded plastic pieces of bubble wrap, even folded towels, but everything in the crisper drawer freezes. Maybe because the crisper drawers sit right on top of the freezer? I don't know. Anyway, I'm going to try that celery keeper and see if that helps. The lettuce always has to go on a shelf to avoid freezing, because Elery doesn't like it frozen and soggy, go figure. (grin) If celery or carrots freeze, I can still toss them into the pan to make my mirepoix or whatever but frozen iceburg lettuce is only fit for chicken food. Shirl, Amanda has a set of four pink Pyrex nesting bowls that were my Grandmother's, so I'm thinking Ashley is probably going to lay claim to this set! I have a cabinet full of pyrex casserole dishes and I use them all the time, love the things. The Princess is always excited to try new kitchen stuff, especially if she gets to eat the results! Annie

I always take brownies out just a couple minutes before the toothpick comes out clean. They seem to continue cooking out of the oven quite a bit. For an 8x8 pan my recipe bakes in 23 minutes @ 350 degrees...but every recipe is slightly different so just use that as a guage not a definite.

It is'nt that hard to figure. Brownies are not that high.
So you would be using the bottom of the pan,
Like LindaC said 8x8.

Rather than the ruler measurement, I'd measure the volume of the pan because of the odd slant to this pan. You can measure the amount of water that will fill the pan to the top (or in the case of springform pans where the water would leak out, use rice).

An 8x8x2-inch pan will hold 8-cups.

Use the lowest time suggested and subtract a couple of minutes from that. Anyway I like my brownies to be ooey-gooey-fudgy-chewy so that's what I'd do! Or if you like them done more, use the toothpick test as was suggested above.

Your actual question, I think, was what size pan you've got.

Pans are measured across the bottom--so your pan is an 8 X 8. Many have tapered sides, that shouldn't make a huge difference in your recipe. And don't forget--cooking times and temps are just guidelines anyway. Not all ovens are accurately calibrated--more important that you read the instructions on how to tell when the brownies are done, and take them out at the correct stage of doneness, regardless of how long they baked.

Thanks, everyone, for your informative answers! The brownies came out "just right" -- I just started checking after the minimum time was up, and when they started to pull from the sides I took them out of the oven.

Yes, azzalea, I wanted to know what size my pan is.

I've learned that, and so much more!

Now if I just had a cup of coffee.....
