I need help with my pygmy date palm. How and where can I ask my question - we transplanted a 3 trunk from the front to the back yard earlier this summer. It has looked great for the past few months and now one of the trunks is dead - the rest looks great and we have a new palm beginning at the bottom - do we cut the dead trunk? Is it possible we have another problem? i.e., bugs or disease? Thanks and tell me how to enter this forum correctly. tasha2

It's still very cold here, and we have over a foot of snow on the ground. I just though of...Hot Chocolate! (No marshmallows, and made from scratch with Droste's cocoa, sugar and whole milk.) Some shortbread cookies wouldn't be amiss. I hear you on the grilled cheese sandwiches. Of course they have to be cooked on a nice greasy grill to qualify as comforting. Ah, nothing like cholesterol to satiate you. Did I ever mention my one claim to health? I have astounding cholesterol levels. My MD is terribly impressed. If I could find a way to take the *caolries* out of this stuff or to distribute the fat somewhere other than my middle...I could eat it all every day!

So I bought a duck...

Here's a recipe from Joy of Cooking that I use often. Simple and delicious. 1 duckling, 4 ½ to 5 ½ lbs, thawed Salt Preheat the oven to 250˚ and place an oven rack in the center of the oven. Remove the duck from its plastic wrapper and rinse under cold water, then pat dry with paper towels. Rub a little salt in the cavity, and sprinkle a little on the skin. Remove any excessive fat from around the opening and the neck. With a sharp paring knife or a skewer, make 20 or 30 small incisions in the skin into the fat. Hold the knife parallel to the skin so you penetrate the skin into the fatty layer, but you don’t want to penetrate the flesh. If you have a v-rack for a roasting pan, place the rack in the pan and place the duck, breast side down, on the rack. (But if you don’t have a v-rack, don’t worry. Just place the duck breast side down in the pan.) Place the pan in the oven and roast for 3 hours. Yes, three hours. Every hour check the duck and prick the skin a little more to let more fat escape. After three hours, drain the fat out of the pan (don’t discard it—it’s great to cook with) and turn the oven up to 350˚, and turn the duck breast side up. Roast for another 45 minutes. Remove to a platter and let the duck sit for 10 minutes before carving. You can make a gravy out of the juices and bits in the pan if you want. If you don’t have a v-rack, you can cook the duck without one but the skin won’t be as crispy. It’ll still taste great, though. Serve with whatever wine you like; the meat is hearty enough to stand up to a full bodied red like a Pinot Noir or Cabernet, but if you prefer a lighter red like a Zinfandel or a good white, go for it.

What's your comfort food?

If I’m sick, I want Campbell’s tomato soup, Nabisco saltine crackers, and a real Coke. Other than that, if I’m needing comfort almost anything creamy will do. 🙋🏻‍♀️ Another La Madeleine lover here! When I can calorically afford it, my favorite lunch is a chicken salad croissant with Strawberries Romanov for dessert. Ten or more years ago, they had a wonderful breakfast/brunch dish that was like potatoes au gratin with ham in it. It also had a large clove of garlic baked in the middle. I always just ate around the garlic. I took DD and a couple of her sorority sisters there for breakfast before they hit the road back to school. One of the girls ate the garlic in her dish. What a surprise!
