What to do with garlic stuffed green olives?

I received a jar of garlic stuffed green olives a couple years ago. It's been sitting in my pantry and I don't know what to do with it. I don't really care for green olives but thought it might be good in some recipes. Any suggestions?

Eat 'em! I throw them into tossed salads as a "surprise". They really are one of those fun sorts of food.

Slice them crosswise into rings to top a pizza or toasted cheese from the oven.

We eat them together with goat cheese and dry sherry as an aperitive.

km, one good and easy way to use the oil with potatoes is to lightly oil and roast them. Start with about 4 pounds of any kind of potato. Preheat the oven to 350Â° F. Meanwhile, rinse the potatoes and rub them under running water to remove any grime, but leave the skins on. Dry them thoroughly with paper towels (kitchen paper) and cut them into irregular shaped pieces about Â½" to 1" in size. Place them in a mixing bowl, drizzle with Â¼ cup of oil, sprinkle with Â½ teaspoon of salt, and mix thoroughly so that all the potato pieces are lightly coated. Transfer to a baking pan or roasting dish, spread them out evenly over the bottom and place the pan in the middle of the oven. Roast, stirring occasionally, for about an hour, or until they taste done (not crunchy and not burnt). Another nice thing you can do with your oil is to use it as a marinade for lamb chops or roast lamb! For example, start with 4 one-inch thick loin lamb chops and 2 tablespoons of oil. Remove them from the fridge, rinse with cold water and pat dry with paper towels, and rub them on all sides with oil. Let stand, at room temperature, in a stainless steel or ceramic bowl for about an hour. Heat a large skillet (frying pan) on medium-low heat for two minutes; add 3 tablespoons of oil, rotate the pan to coat evenly, and add the lamb chops. Brown on both sides, about 90 seconds per side. Turn the heat down to low (not too low; you should still hear them sizzle) and cook for about 12 minutes per side, or until the centers of the chops are light pink. If you time it right, you can have the lamb chops and the roast potatoes ready at the same time! Serve with a tossed salad (your oil would make a lovely dressing with red wine vinegar, but that might be overusing it on a single meal) and invite over your Gardenweb mates!

I have a different questions that relates to the safety questions here. I have a jar of artichoke hearts in the fridge, a big jar from Costco. I've had it for months. It contains both oil and vinegar, and the oil sits in a pretty thick layer on top of the artichokes and brine. Should I be worried about safety, because the oil is creating an anaerobic environment underneath? I've been eating these sporadically in uncooked pasta sauce with no ill effect. Now I want to bake them inside some turnovers to bring to the ALS fundraising walk in my city. Of course I don't want to put strangers at risk, especially not sick strangers. Should I throw out the artichokes and stop buying big jars? If I buy new artichokes, can I assume a newly opened commercial jar is safe, or should I forget the artichokes for this potentially immune-compromised population? Melissa

WOW! Very cool idea. I made up one and a half pounds of garlic, using Monique's link, on Saturday which doesn't even seem to have made a dent in the four pound bag I bought at Costco (what was I thinking?). Unfortunately mine was already frozen in 8 and 12 ounce jars when you posted. But I still have two and a half pounds left and I have plastic spoons, so I can still try it. Along with roasting a bunch and freezing them on a sheet pan and then bagging. I think I have a lifetime supply. Lee

Eat 'em is right! Straight from the jar is good, but if they are marinated in a little vodka (chilled, straight up in a lovely stemmed glass) then they are positivlely delish!

my quick thoughts...even before I read the other responses
- eat them
- slice them on pizza
- put them in spaghetti sauce
- garnish a martini
- send them to me!

I too eat them straight from the jar, delicious! If you don't like to eat them plain, put them in a salad, baked ziti, or Johnny Musseti(sp?).
My husband Wayne makes a awesome tasting olive bread. I wonder if they could be used in that also. He usually puts 3 different olives in it but ones that don't have a stuffing in them. Hmmmmm, have to give that a try.
Mix them with other olives and heat just til warm with a little olive oil.
Don't let them just sit in the pantry! Use them up. NancyLouise

I don't have any recipes, but the next time you have friends over or go to a potluck, open the jar, put them into a bowl, and watch them disappear.

I really can't add more to what as already been posted. Add to a good Antipasto Platter.

If they were in my household, they would have been gone within a week!:)

Jessy sent me some along time ago. I'm not happy about that because I have been buying them ever since and eating them in almost one sitting.

I prefer them in a gin sauce. A stemmed glass for sure. Stick a toothpick in the olive. Pour a little gin over them... a little more gin... a little more. Remove olive and drink gin before eating olive off the toothpick. Do not eat toothpick. Repeat until gin evaporates or you can no longer reach the bottle. A good time to post on the TGIF thread.

I like to use any kind of olive, pureed (like a tapenade), add a touch olive oil and use as a sandwich spread in place of mayo. I've never tried it on the soft store-bought bread...only on 'good' breads.
