Monique's preserved garlic in olive oil

After seeing Annt's picture, I just had to try this! I bought a large container of fresh peeled garlic cloves, processed them in the food processor, added the juice of 1 lemon and enough olive oil to cover the garlic.

Now, after reading about the food safety issues with this concoction, I decided I should freeze it but I dont have ice cube trays, which Ann suggested for me to use.

So, I came up with this......... Garlic Spoons!! (get it? just like chocolate spoons)

When these are frozen, I'll just put the spoons into a ziplock bag and store it in the freezer and now I'll have fresh garlic on hand all chopped and ready to go.

Hello, Joanfreed. Last november I had the same experience. Although not in exactly the same circumstances. I had simply chopped garlic loves, put them in a small jar and poured olive-oil on top till the garlic was submerged. No previous soaking in vinegar. Yet, after roughly 48 hours, the whole lot turned in a kind of bluish green. We preferred to stay on the safe side and so, we threw it in the dustbin. I haven't a clue what was going on. The garlic was a rocambole cultivar, a leftover from planting garlic which I had ordered a few weeks earlier. I don't think there was something wrong with the garlic. I rather tend to believe there must have been a kind of reaction with acid components in the olive-oil. I also thought of a colouring which might have been caused by the green shoots which had developed in the garlic cloves. On the other hand, since then, I have prepared several batches of minced garlic in olive-oil and the phenomenon has not repeated itself. The mystery is still there.

It is the garlic solids. Without testing there's no way to determine whether roasted garlic is safe or not, but my guess is not because you'd have to be 100% certain there was no water activity left in the garlic whatsoever. That's why infusing oil with dried garlic flakes or dried peppers isn't a problem. My inclination is not to take any risks with botulism. If you wish to keep the roasted garlic in the oil, again, freezing is the safest option for long-term storage. Given that it's oil, it's not going to take long to thaw. It's similar to what many Italian restaurants do. They often store chopped garlic in oil in the freezer, scooping out what they need as demand requires. Carol

Another option might be to try the Caponata from Small Batch Preserving. Not quite the same, but we like it a lot and it has been tested. CAPONATA "Caponata is a Sicilian dish served as a salad, side dish or relish. We also like it as an appetizer spread on toasted baguette slices." 1 small eggplant, cut into 1/4-inch (5 mm) cubes 1 1/2 tbsp pickling salt (20 mL) 2 large tomatoes, peeled and chopped 1 medium sweet red pepper, diced 1 cup diced zucchini (250 mL) 1/2 chopped onion (125 mL) 3 large cloves garlic, chopped 1/4 cup chopped stuffed olives (50 mL) 1 tbsp capers, rinsed (15 mL) 1 bay leaf 1 tsp fresh thyme (5 mL) or 1/4 tsp (1 mL) dried 1/4 tsp each: salt and freshly ground pepper (1 mL) 1/3 cup red wine vinegar (75 mL) 2 tsp granulated sugar (10 mL) 2 tsp olive oil (10 mL) 2 tbsp tomato paste (25 mL) (Read Step-by-Step Guide (below) before proceeding with recipe.) Place eggplant in a non-reactive bowl. Sprinkle with salt and stir well. Let stand for 2 hours. Drain eggplant in a sieve and rinse twice. draining thoroughly; press out excess moisture. Place eggplant, tomatoes, red pepper, zucchini, onion, garlic, olives, capers, bay leaf, thyme, salt and pepper in a large roasting pan. Heat vinegar, sugar, and oil in a microwavable container until hot, about 1 minute, stir into vegetables. Bake in a 350 degree F (18OC) oven for about 1 1/2 hours (1 hour for a convection oven), or until vegetables are softened and liquid has evaporated, stirring every 20 minutes. Remove pan from oven, discard bay leaf and stir in tomato paste. Remove hot jars from canner and spoon relish into jars to within 1/2 inch (1 cm) of rim (headspace). Process 15 minutes for half-pint (250 mL) jars and 20 minutes for pint (500 mL) jars in a boiling water canner. Makes 5 Cups (1.25 L)

yeah, anything is possible but the question it what the rate of its prbability to occure. The Clostridium botulinum and its spores HAVE TO be present in the ingredient in the first place to germinate/multiply under certain conditions, IF it has no been destroyed. Unlike many bad bacterium that exist in the air , Clostridium botulinum, is generally soil born and may exist in some see food and animals intestint. Final Word: Botulisim is a fact and deadly too but the occurance of foodborne botulism is very rare. According to FDA and CDC , in average 24 case reported per year in USA. Out which 2 deaths resulted. In the final analysis, one should organize his priorities in the order of their importance. For me botulism is not even in my list. It POSSIBLE that one day I might die of it but it is more likely that I might win the lotto or get striked with a lightening. Seysonn

shaun, that would be really handy too, just stir a spoonful of garlic into your soup or sauce or whatever, as soon as it got a bit warm it would slide right off the spoon.

Let us know how they work when you use a couple, will you?

Annie I just tried it.

I heated up some sauce, stirred it with a "garlic spoon" right from the freezer, didn't let it thaw ... and the garlic slid off the spoon into the sauce. Worked perfectly.

I totally agree with Alexa. It is an absolutely genius idea. I'm buying plastic spoons today.

WOW! Very cool idea. I made up one and a half pounds of garlic, using Monique's link, on Saturday which doesn't even seem to have made a dent in the four pound bag I bought at Costco (what was I thinking?). Unfortunately mine was already frozen in 8 and 12 ounce jars when you posted.

But I still have two and a half pounds left and I have plastic spoons, so I can still try it. Along with roasting a bunch and freezing them on a sheet pan and then bagging. I think I have a lifetime supply.

Somehow I figured that was going to work well, Shaun, the oil would get a bit more liquid and the stuff would slide right off. Thabnks for the idea!

Lee, I'm not quite sure what you were thinking, buying 4 pounds of garlic, LOL. Maybe that you could freeze it?

LOL Annie, the peeled garlic only came in four pound bags in the refrigerated produce section at Costco. The only choice was buy it or not. And of course the price was right so I probably had a fleeting thought that if I didn't use it all, I'd still be money ahead buying it at Costco even if I wound up throwing some out. But I don't like to waste things.

Maybe I need to make chicken with 40 cloves of garlic - several times.

I just searched and found Lakeguy's garlic soup and that uses 44 cloves of garlic and sounds very yummy.
