The Flopster Is Back - Dinner Goes In The Trash

Well, I'm on a roll here.

I've been interested in using fruit while cooking. I experimented with adding orange juice to my tomato-cream-chicken soup, and it was really good. So tonight I tried sauteeing some shrimp, then serving them with a sauce of fresh-squeezed, reduced orange juice thickened with corn starch. It had promise - the sauce started out tasty - but unfortunately I sauteed the shrimp in butter and turns out the tastes of butter (on the shrimp) and orange juice clash terribly. It tasted a little like vomit, actually.

I also made an old standby, a small bonito filet, simmered for two minutes and sauced with a reduced teriyaki. Alas, I tried a new way of cutting the fillet - deeply slicing a checker-board pattern through the skin - and it caused the filet to overcook - instead of being soft and rare-raw inside, the heat penetrated too much and the whole thing was cooked like canned tuna.

The last experiment, a sort of baked ratatouille with a broiled cheese-bread crumb topping, seemed to be headed in the right direction, but I over-salted it. At least that dish didn't get thrown out.

And my darned bread is getting more like Wonder Bread every week. Arrgh. I'm going to lose my confidence soon, and start making Cheese Wiz brulees or something.

Any nice humiliating flops lately? Better yet, tips on cooking with fruit?
