Favorite Recipes made Light

I just received an email from Cuisine at Home announcing their new magazine "Cuisine Lite", that started me thinking.

I have been making a recipe for Corn Pudding that was in Southern Living since 1985. Our favorite recipe for corn pudding but it's heavy on the good stuff. I keep thinking I would send it to Cooking Light and see if they could make it lighter without sacrificing taste and flavor...but never did. Here's the recipe:

Tee's Corn Pudding

1/4 C sugar

3T AP flour

2 teas. baking powder

1 1/2 teas. salt

6 large eggs

2 C whipping cream

1/2 C butter (or margarine)melted

6 C fresh corn kernels (about 12 ears) or frozen whole corn

kernels. I have always used frozen.

1. Combine first 4 ingredients.

2. Whisk together eggs, whipping cream, and butter.

Gradually add sugar mixture, whisking until

smooth. Stir in corn (be sure it's thawed if using

frozen).

3. Pour mixture into lightly greased 9x13 baking dish.

4. Bake at 350 for 50 minutes or until deep golden and set.

5. Let stand 5 minutes.

Any ideas how to lighten it? I don't make it often...and it's very easy to cut in half. I have posted it a time or 2 on various threads but don't know if anyone has ever tried it. As a matter of fact, as far as I know, no one has ever tried anything I have posted! How sad is that!!!!LOL

Rather than make changes that would affect the taste, I'll just continue making it occasionally. Sure is yummy!
