Can you really cook with "Egg Beaters"?

Howdy!

I'm wondering about Eggbeaters, the pasteurized yolkless egg substitute. It seems like a really convenient shell egg alternative to take camping because fridge space is minimal. But if it's icky, I'll go with the eggs.

Can you make decent pancakes with Eggbeaters? Scrambled eggs? Will it (they?) stick a meatloaf together? No gourmet cooking--just camping food. :)

I guess what I want is eggs in a space-saving container that have been pasteurized--I would be nervous carrying a jar of eggs I cracked myself unless I used them right away. Eggbeaters has a 7-day shelf life once opened which is pretty good for my intended use.

Any experience to share, or alternatives? Thanks!
