fry eggs to my own satisfaction?! I use an iron skillet with some butter and a bit of oil to avoid sticking. Watching carefully, I eventually add a bit of water and put on a lid to avoid having to flip the eggs which is when I break them and the yokes run. If the heat is low the eggs seem to overcook. If the heat is higher, they stick. HELP!
