My friend brought 4 bushels of wheat back from "Out West". The deal is I get 3 bushels free but I mill the fourth bushel for him. This is the first wheat I have milled with the second hand Retsel Mil-Master I had bought. It does an excellent job of milling the wheat. It comes out just as fine as store bought. The flour is slightly warm but not even close to being hot. It is really quiet too. I am making bread using half bread flour and half whole wheat. I want to make it with 100% whole wheat flour without adding vital glutton. Does anyone have a recipe like that for bread, pizza dough, pasta and others?

christineny - Any standard enriched bread recipe will make burger/dog buns, so pick from any of your favorites. You really don't need a special recipe. I do have some tips I'll share that hopefully will make some sense. 1. If you happen to have muffin top pans (usually 6/pan and are very shallow, about 1/2-inch deep), they work great for helping to form a nice round burger/sandwich bun, but on a cookie sheet is just fine. There are pans designed for both hamburger and hot dog buns, but I've improvised and used what I already have. I also have a Pizza Piccolo Pan (12 shallow impressions - I got it from King Arthur) that I use to make small sandwich buns (1.5-2 oz. dough). I measure the dough 2-4 oz. for regular burger buns (depending on how large I need them). You can go larger if you like, just remember 1 oz. of bread is a serving, so you can have a lot of bread servings tied up in one bun - it's already at least 2-servings. After you form the dough ball, pat it to about 1/2-inch thick (oil your hands for easy handling of the dough). Cover and allow to rise per usual... 2. The amount of dough for hot dog buns is approximately the same size as the hot dogs you are going to use (also 2-4 oz.), rolled to approximately the same length and size as the hot dog you are using. I scale (weigh) the dough for hamburger buns and hot dog buns so that they are close to the same size when done. I bake hot dog buns two at a time in small loaf pans (3-1/4x5-3/4-inches). This is convienent for me because I can bake a couple if I have extra bread dough from making loaves, and we only use 2 at a time and these freeze nicely wrapped in a pop-up sheet of foil I get from Sam's Club. When the panned hot dog buns are done/cool, I pull the two apart and slice each one down the middle, but not quiet completely through. These are perfect for holding a hot dog that I butterfly open (one cut almost completely through) and grilled open. You can also place the hot dog size pieces of dough on a baking sheet to raise/bake individually. Another option is to place them in a pan for pull-apart hot dog buns - use a pan about 5-6 inches wide, which is the approximate length of most hot dog buns (disposable 8-1/4x5-1/4x1-inch foil pans work pretty good for 5 hot dog buns for regular hot dogs). I always keep individually wrapped burger/sandwich buns in the freezer. -Grainlady

Sorry about the delay in getting back to you, we've been out of town for a week and I just got back late this afternoon and am playing catch-up. Glad you had good results with the recipe. I give credit to my friend Mildred in Missouri for sharing the recipe with me. 1. I would add the coarser flour to the sponge. Either will work (as you have discovered), but the sponge gives the sharp bits of bran time to soak up the liquid and soften in the coarse flour. Those sharp bits can cut gluten strands. 2. Bread Machine Yeast is a type of fast-acting yeast like SAF-Instant is. You made a good substitute. SAF-Instant is a "super" yeast, and somewhat different from the other brands of fast-acting yeast products (Bread Machine, Rapid-Rise and Quick-Rise). I consider SAF-Instant a superior choice over the other fast-rising yeast products, but that's a personal choice. I've used all of them at one time or another over the years. 3. Pan sizes... A 9x5-inch pan is actually designed for quick breads and holds about 2-pounds of dough. For over two pounds of dough you would need a Jumbo Pan - 10x4-1/2-inch. I personally don't like these over-size loaves, especially when trying to cut thin slices. Small loaves are easier to cut thin than large loaves. Another personal preference. Standard 8-1/2x4-1/2-inch pan holds up to around 1-1/2-pounds of dough. I have a pair of Norpro pans that are just slightly smaller at 7-3/4x4-1/4-inches that works very well for 2 loaves. 7-1/2x3-1/2-inch pans - up to 1-pound of dough. I often divide the dough equally into three of these small loaves. I will also divide the dough into one 1-1/2-pound loaf and the rest for something like an 8-inch pan of dinner rolls, 6 jumbo pecan cinnamon rolls, 6 hamburger or hot dog buns. The cultured milk products (dried or liquid buttermilk, kefir, yogurt) seem to aid in the sponge. My friend, Mildred, often uses up to 24-hours, with half the time in the refrigerator, similar to what you did. A very forgiving recipe, as you've just proven. I also like to add 1/2-cup of coarsely-ground multi-grain mixture, similar to multi-grain cereal (5-grain, 7-grain, 11-grain, etc.), except I mill my own. I add it towards the end of kneading to keep the sharp bits from cutting the gluten strands. I like the "tooth" it adds to the bread. -Grainlady

I went through the very same process as you, Paulope, and I live in Oklahoma, which is supposed to be wheat country. However I live in the NE part of the state which is mostly cattle country. I ended up getting my best results by talking to local bakery owners, one of whom belongs to a co-op and got a couple of buckets for me when she got hers. Then I paid her for them. This is the best deal I've been able to find. I talked to the County Extension office, our local health food stores, and compared prices at various websites. I tried to contact the folks at the LDS church, but no one answered the phone. The next best price, even with shipping that is as much as the product costs, is Heartland Mill in Marienthal, KS www.heartlandmill.com . There was a whole long thread that Grainlady posted on with lots of helpful information, including her wonderful whole-wheat bread recipe and a method posted by someone who soaks the wheat and then processes it in a food processor, about a month or two ago. It was either on this forum or on the Money Saving Tips forum. Grainlady is a great resource on this topic and doesn't seem to mind repeating herself to folks who missed the previous discussions, but reading previous posts can be very educational.
