Steve, I ground dent corn from Hickory King that we grew, using a Corona hand mill. I also took the kernels off by hand (how else?) we only had a few cobs. Just enough for 2-3 corn breads. I use the Corona mostly for nut meals, but it works well for corn too. I had the exact same problem you describe, but I attributed it to the type of corn. The year before, I grew Hopi blue and had no problems with the chaff or germ not grinding right, with the exact same grain mill. This, the flavor, and the horrible pest problems lead me right back to growing Hopi blue, and I will not grow HK again. This year I am sacrificing the corn patch for more tomatoes, so no corn at all. However, I loved the Hopi blue, never had corn bread that good! I did not care for the corn bread we made with the hickory king. I had to do the same thing you describe, sift the chaff from the ground meal. Same exact problem with some coarser grains getting in there too. I saved it in a baggie and I was going to add it to the mush I make sometimes for our dogs. I wonder if it would work to cook it as grits? In any case, I have wondered if this might be the difference between flour corn (Hopi blue and others) and dent corn (Hickory king and many others)? The blue just ground so well by comparison.

I have a Golden Grain Grinder that is 30+ years old...my dad gave it to me about 15 years ago. I really like it. It has 2 stones that grind the grains and you can adjust it from coarse to cake-flour fine. All of you that are grinding wheat, can you tell me what is the whitest wheat? We have several Amish and Mennonite communities near us and I have bought several wheat and flours from them, but they all have their own name for them. Some call it "naturally" white wheat...is that whole wheat, or just unbleached? Last week I bought 3 lbs of "hard spring white wheat" to grind, and it does seem to be whiter than a lot of wheats.

I wouldn't hesitate substituting AP for wholemeal either. While I'm at it, I'll go ahead and pass along a pretty good web site where you can find all sorts of answers to "what to substitute for...". Sure helps a gal (or guy) out of a pinch when you live in the middle of nowhere and can't always find what you need or want.... BTW, I keep a couple cups of freshly-milled flour in the freezer for up to one week for "emergencies" like this. WOW!!! What's old is new again..... ;-) dian57, your recipe looks great! I have a new-and-improved add-in choice since this thread - it's High-Maize Resistant Starch. High-Maize would be a good substitute for wheat germ (measure-for-measure) in the Cornell Bread Recipe. Wheat germ is unnecessary in the Cornell Bread Recipe IF you use at least a portion of freshly-milled whole wheat flour in the recipe to begin with...fresh wheat germ is already available in whole wheat flour. Milling your own flour will also assure the highest amount of nutrients from the wheat. This is why I find it amazing the Cornell Recipe didn't use whole wheat flour in the first place. The nutrients in freshly-milled whole wheat flour begin to degrade within 3-hours of milling, and the wheat germ oil oxidizes quickly. You will find wheat germ purchased as an individual ingredient is basically a rancid product - which means it's a free-radical, which is destructive to the body. The rancidity in the wheat germ purchased commercially is covered by the toasting they do to the raw germ. Rancid oils don't have to smell rancid to BE rancid. If they smell rancid, then they have been rancid for a VERY long time. If you want to add wheat germ to a recipe, add freshly-milled whole wheat flour - it's in there...
