Buttermilk....not from *scratch* exactly

This past weekend I tried a new trick...I made buttermilk, sort of. Did you know you can make MORE buttermilk from buttermilk that you already have on hand?

Take a 2 cup glass jar and put one cup of a fresh cultured buttermilk in it. Add 1 cup of whole or 2% milk to the cup of buttermilk, give it a stir, let it sit at warm room temperature for 24 hours. You end up with 2 cups of buttermilk for baking or drinking (I don't drink the stuff). If the milk doesn't look thick enough after 24 hours, let it go another 12 hours or so. You must use buttermilk labeled as "cultured" and the use by date must be good.

I love to use buttermilk in cornbread, biscuits, scones, and yeast breads/rolls. This trick will help me have buttermilk on hand when I want it.
