Lightening up two favorite recipes

My husband has two favorite recipes for sweets that he loves. The way these recipes read, they might be "usable" with some substitutions (given his heart condition). But I'm at a loss as to what might actually work. I'd hate to see him have to give up these favorite things - maybe you all have some suggestions about how I can doctor these recipes to make them "fit".

First recipe is for "brown sugar cookies". It calls for a cup of brown sugar, a cup of white sugar, a cup of shortening, 2 eggs, a tsp of soda, a pinch of salt, 3 cups of flour, and 2 tsp vanilla. I know I can use Egg Beaters instead of the 2 eggs. What could I use instead of the shortening? Today's shortenings may be trans-fat free, but they still have a lot of sat fat in them.

The second recipe is for "Coconut Bars". The bottom layer is made of graham cracker crumbs, sugar and 1/2 cup "melted oleo". (Probably could use light margarine from a tub.) The middle layer is 2 cups of flaked coconut and 1 can of sweetened condensed milk. (Does that come in a "light" version? I've never seen it.) Top layer are 1 cup each of chocolate and butterscotch chips, melted together. Any help on these?
