For those who like rissoto...

What are your favorite inclusions and recipes? Do you always use wine? Onions? parm cheese?

I love the mushroom risotto I make; and everytime I think about what kind of risotto to make I mostly come back to the mushroom one with chicken broth.

I have made a spinach rissoto, with onion white wine and chicken broth that was really very good.

But wondering what other kinds you make? Lars makes an asparagus risotto....I have seen shrimp risotto on a menu.....wondering about clams? Have eaten and loved one with lots of sundried tomatoes and beef broth. Somewhere I have a recipe for risotto using lots of grated lemon peel...but I can't remember what else.

What else have you put into your risotto?
