Oxygen Absorbing Packets?

I am organizing, okay--reorganizing my pantry, and find that I have a lot of dried beans and peas some of which I want to keep. In researching storage options, I find that oxygen absorbing packets are recommended. Any thoughts or experience?

No clue, Cathy. I have dried bean, peas, lentils. All of them are stored in those old blue glass canning jars because the old jars aren't good for canning, the tops are too inconsistent and if I use part of a bag, I always end up spilling it. So I put them into the jars with lids which I can't use for anything else anyway.

Are those packets like the ones in vitamin bottles and such?

I can tell you I don't have any, have never heard that I needed any, don't know anyone else that has any and my beans/peas/rice/lentils are fine.

I don't know if that helps because I think it's more humid in Florida than it is here most of the time and so your storage needs might be different than mine.

All sounds great. Question: Do you lay the tape flat? Is the tape folded over with the seed inside? Do the roots go through the lower layer to get to soil, or do they fan out growing between the two layers? Does this slow them down if they are laying on top of a paper layer? How about the shout going up. If there is a paper layer over the top of the seed, can the new shout push up through this layer of paper, or do they go sideways looking for a chance to go up freely? As they push up do they push the paper up on top of the shout? It seems that if the seeds are between two layers of paper, it would change their growth shape.

Yeah Mike, you're right - tomato cuttings root easily and don't need any artificial oxygenation if you put them in (a small or bigger) amount of water. If they die or wilt in a few days before taking roots, it's not because of a lack of oxygen in the water, but most likely because they suffer (ending up in cell damage) from heat or other unfavorable causes. The mostly overseen aspect of water oxygenation and condition is probably that Hydrogen Molecules have a high affinity for Oxygen molecules anyway -> H2O. Which is definitely a good thing as "water" tends to catch Oxygen molecules when ever it can. In fact it can't be without them and that's why you actually never encounter H in it's pure form in nature ;-) The other common error is to assume that one can saturate or hyper-charge water (or nutrient solution) with oxygen through mechanical methods. But as there is a limit to the dissolved oxygen water can absorb and hold, which is dependent on water (nutrient) temperature and to altitude to some extend - you can't exceed the physical maximum that can be dissolved under the existing conditions. At see level, water has indeed a bigger capacity of dissolved oxygen as water at a certain- or high altitude has. Hence, depending on temperatures and altitude (to some extend only for the later) water can (literally) only hold a certain amount of oxygen anyway. And here is exactly the point where ideal water temperatures of nutrients make sense. But then again (and here I truly speak from experience) sometimes over-idealized or even overrated. Although a temperature of 24 degree C is commonly accepted as ideal and is probably the best compromise between dissolved oxygen CAPACITY and growing rate, - a slightly higher temperature, up to 28 degree C, may end up in a better growing rates with CERTAIN conditions. As long as the (indeed lower) capacity of dissolved oxygen at higher nutrient temps is replaced continuously, of course. One must add here that the higher the nutrient temperatures climb, the more likely fungal introduction and spread becomes. There also is a lot of controversial debates and "experimentation" about if you can "add" any OXYGEN through air bubbles at all - and if, how much? And what would be the difference between finer and bigger bubbles? I've read a lot about the topic and couldn't conclude anything plausible out of it so far- which made me end up in not using any air bubblers at all. The only thing that I conclude, is that water movement of any sort (including the one created with bubblers) is accelerating and promoting oxygen replacement. Hence I generally use the downfall of any runback of nutrients for the purpose. With success I must say and apparently with sufficient re-oxygenation support. And that's the term I would use here, I guess: "re-oxygenation support" ;-) Cheers, Lucas

Bulk flour storage?

1. Bleached and unbleached flour has a shelf-life of 6-12-months (depending on how old it was when purchased and the temperature of the storage area). You can double that time by freezing it. 'Room temperature' for food storage is considered 70-degrees F. Optimum storage temperature is between 40-60-degrees F. If storage temperature is above 70-degrees F, the shelf-life is going to be less. I suggest buying no more than what you can realistically use in a year. Old flour makes horrible baked goods and is often the reason for failed bread recipes. 2. Keep it stored in an airtight container such as a plastic storage container (check restaurant supply stores for a good selection in lots of sizes) or food-grade storage buckets, not the paper bag it is purchased in. If you are buying flour in 25-pound bags you can re-package it in zip-lock bags in user-friendly amounts and stack those in a large food-grade, air-tight container. Moisture can penetrate the paper bags and the flour will not keep as long when that happens. Keep it as cool as possible and away from light. Food storage enemies: air, heat, moisture and light. 3. Commercial whole wheat flour definitely requires freezing. Freezing will slow down the wheatgerm oil from going rancid but it won't prevent it completely. Those oils begin to degrade withing 3-hours of milling, as do the nutrients. I don't suggest commercial whole wheat flour for long-term storage at all. 4. Cornmeal has an even shorter shelf-life than bleached/unbleached flour - 4-6-months. You can double that amount if you freeze it. Make sure you purchase degermed cornmeal for storage. SUGGESTION: Because of the short shelf-life for bleached/unbleached flour, in my Food Storage Classes I suggest people purchase it in the fall when it typically goes on sale for holiday baking, which is the time of the year when most people do most of their baking. Use the largest portion of it up by March or April if you don't bake in the hotter months and wait to restock again in the fall. CAUTION: The one storage method NOT to do with flour is to vacuum-seal it in FoodSaver bags for storage. Flour has enough moisture in it when vacuum-sealed can develop a mildewy smell. Save vacuum-sealing for foods (dry goods) that are 10% moisture or lower. You can, however, vacuum-seal flour in canning jars using a FoodSaver and the jar sealer. The flour will remain free-flowing in the jars, instead of packed tight like it gets in the FoodSaver bags, and this will prevent the flour from getting that mildewy smell. These are the recommendations from FoodSaver. If you are interested in having flour and cornmeal for longer than the suggested storage life you can opt for purchasing them in hermetically-sealed #10 cans, which is VERY expensive. The best method for long-term storage is to buy whole grains and mill your own flour and cornmeal. Wheat will keep for decades and corn for many years. ...

s8us89ds, I myself have not done any first hand 'work' on this topic. My earliest 'encounter' was in chemistry class; when photosynthesis was discussed. I learned that plants respired during the hours of darkness. They removed (inhaled) oxygen from the air and added (exhaled) carbon dioxide. "This is the reason, though not a very good one, for removing plants from a sick-room at night." said the chemistry book (Chemistry for Schools by B C L Kemp). Many years later Ciba Geigy (I think) sponsored a film which featured a greenhouse full of lettuce plants. The kerosene heaters were inadvertently left on and the vents were closed. They reaped a bumper crop of lettuce - implying that the carbon dioxide-enriched air was the significant factor. Even more years later, I was fascinated by the fact that "Brownfields" were significantly cleaned up by growing crops like cabbage on the area. (I do not know what they did with the cabbages). My particular interest in this was piqued because the Municipality for which I worked had a "Brownfield"; but I could not generate enthusiasm for a clean-up program. Then Dr. B C Wolverton wrote "How to Grow Fresh Air". The book contains detailed information about the ability of 50 plant species to reduce the VOC's from the air in homes and offices. I was quite impressed with the book. Then I tried to find out about the author HERE! Quite a few people who know about these things, compared him to Dr. Alex Shigo. Apparently there are some employees of the "Government" who amass a lot of information by reason of their employment. They retire and use this information and knowledge to author books, give talks etc. for profit to themselves. I once served on a committee that organized programs for the green industry. I once suggested inviting Dr. Shigo to talk about CODIT. "Too stinking expensive!" Snorted the chairman. My own conclusions are that plants do remove impurities from the air and soil. They do so in very, very small quantities. It takes many plants and space to accomplish this. The best application I can think of is to have a greenhouse constructed on the roof of the house. In this grow the plants most effective in removing the gaseous pollutants. Install a circulation system that removes the air in the house, keep it in the greenhouse long enough for the plants to do their good work; and then introduce this cleaned air back into the house. Air changes per hour is a standard that can be used.

I must confess I don't see the need for them. If you're worried about oxidation and rancidity, one technique to avoid oxidation in long term storage is to use dry ice. Fill your (air-tight) storage container with the dried goods, put a chunk of dry ice on top of it and put the lid on loosely. The dry ice sublimates (love to use that word--college chemistry finally pays off!) into CO2 gas which, being heavier than air, displaces air from the container and replaces it with CO2. Then once the dry ice is completely gone, tighten down the lid of the container.

Amateur beermakers do use oxygen absorbing bottle caps when bottling certain high-potency brews which require long aging (6 months or more) such as barley wines and October ales. Since most home brew recipes are at their best after aging for a few weeks rather than several months, for most recipes the oxygen absorbing bottlecaps are overkill.

Cathy, you can vacuum seal them. I did some in bags and some in canning jars. I got the jar sealer attachment mostly for nuts, but then it seemed a good idea to seal some beans, etc., because we use them pretty slowly.

Annie, I have a lot of old blue canning jars full of grains and pasta. They're very pretty. I lucked into them in a funny way. Long ago we found a spot out in the country where someone had been using old canning jars for target practice. Among the shards of dozens of lovely old blue jars, we found some that were whole, and we rescued them.

Thanks all for your opinions, I greatly appreciated you input.

The Oxygen Absorbing Packets are those little packs you find in vitamins and the like.

Peppi, I have had so many of my FS canisters fail because they crack. Yesterday I bought a case of 1/2 gallon and a case of quart canning jars and I am switching food items to them. I have the hand-held FoodSaver to use with the jar sealers (regular and wide mouth). I have spent today switching flours, pastas, rice, and Beau & Lily's snacks to the jars. This will give me an opportunity to use the hand-held more -- I love it; it's quick and has a small foot print.

I have had ALL MY FOODSAVER CANISTERS FAIL BECAUSE THEY CRACK!!!!! JARDIN, ARE YOU LISTENING????? DH wants me to call them everytime because they are life time guaranteed. Pfah.

I agree with using a FoodSaver instead of oxygen absorbing packets for long-term storage (more than a year). I've stored hundreds of pounds of grains/seeds/beans using a FoodSaver for over 20-years - since I got my first FoodSaver.

For pantry use, you don't need anything other than and air-tight container if you plan on using them within the year. Oxygen-free storage is always a plus, since oxygen degrades all foods over time. Be sure to keep them out of heat, light, and humid conditions.

jessyf - I've gone from using the plastic canisters to using the FoodSaver Universal Lids (they come in 2 sizes 4" and 5") - which are less expensive than the canisters. They work on any container that has a smooth edge and I use a lot of 1/2-gallon canning jars for food storage. I vacuum seal a canning lid on the jars, but when I transfer the jar from storage to pantry use, I'll put a Universal Lid on the jar. They are easy to open and reseal.

Cathy, I was just thinking of storing in the bags, not hte jars. Seal in one pound packs and done.

i thought the hand held was discontinued, but by your post I see I need to order one tonight.

Grainlady, if I use a canning jar, do I put a metal lid down first, then the vac attactment? After vacuuming, do I remove the FS lid and leave only the metal? Can you tell I have never tried it?

Pep, I really like the convenience of the hand-held. I have been using on the canning jars for two days while making the transfer of food items. It is super simple.

Most of this you know way better than I do but to answer your question: soften the lids in hot water
wipe dry
clean jar rim
put lid on jar
put FoodSaver Jar Sealers over jar
remove air with hand held until light turns green

Also, I have had the Universal Lids for years and never used them until yesterday after reading Grainlady's comments. So I dug them out and tried it with the hand held--piece of cake.

All the FoodSavers I've had have a hose and a jar sealer attachment - which fits over the jar with the metal lid on the top of the jar (not the ring). They come both regular and wide-mouth. You need to pre-soak the canning lids to soften the sealing compound before using them on a jar - as mustangs posted.

How To: Bring water to boil, then turn off. Pre-soak lids 5-10 minutes. Dry and attach to the jar using the jar sealer and follow the general instructions posted by mustangs.

There should be complete instructions in the user manual of your FoodSaver for how to use the FoodSaver with the jar attachment for your particular machine.

Peppi, I forgot to add that using the canning jar ring after sealing is optional. I use it to hold down the directions or notes of the food inside. E.g. The instructions for buttermilk-I cut out the measurements (in a circle) and put them between the lid and the ring.

I think I need to get one of those Food Saver jar sealers also. As for the oxygen absorbing packets - I have a collection of those from products that I've bought at the Japanese market. They put them in just about everything, and the ones in the Furikake jars are particularly big. Before I reuse them, I dry them out in a 150Â° oven. Generally, we don't have excess moisture/humidity here (except for yesterday), which is very different from Houston and the Gulf Coast area.

I think those packets found in pill bottles, etc. are silica gel packets meant to absorb moisture, not oxygen.
