Making Ravioli - tips/tricks/filling ideas (no dairy)

Both me and DH love fresh made ravioli and I'm considering making it - never have made it, just bought what others have made at the farmers market.

Are there any tricks to it. I don't have any special tools or a pasta maker.

Also the filling part - we need our daughter to be able to eat it too and all recipes I find have some sort of cheese in them (she is allergic to dairy). Is the cheese important to the filling or can I just omit it and get good tasting results. I'm a cheese lover myself so it seems like omitting the cheese might not have the same taste as we'd expect.

Any good filling recipes?
