Help w/ menu?

Hi --

I'm having 6 friends over for dinner on V-Day... I'm trying to plan a menu so that I'll have minimum prep/work once they arrive (early, for drinks :)

So far, I'm thinking:

- homemade dinner rolls and pumpkin bread (make both on Sat)

- cream of mushroom soup (ok to make Sat? or make Sun AM?)

- probably a garden salad... perhaps something "fancy" with fruit and a balsamic-based dressing... depends on the rest of the meal.

For the main course I'm planning to do my mom's version of baked chicken pieces. Everyone loves it, and it's easy.

Side dishes are where I'm waffling... I keep thinking of things that are sweet. :( I'm leaning toward roasted potatoes (w/olive oil, butter, and parmesan cheese). If I have the baked chicken and roasted potatoes as the base, what other sides would be best? I'd like several choices.

I thought of cardamom carrots (but sweet).

I thought of the broccoli salad w/ raisins, sunflower seeds, etc., but again it's sweet.

I'm thinking of green beans w/ garlic -- but don't know if they'd like it. I LOVE it. :)

Lots of veggie sides are good, since one person is diabetic.

And for dessert: I'm leaning toward something heavy on the chocolate (chocolate cups w/ a mousse?) or fresh fruit and yogurt sauce (but then I'd nix the fruit in the salad).

Any suggestions???
