Cooks from the south - menu suggestions help

We're having dinner guests tomorrow night. He LOOOOOOOVES to eat good food, she doesn't cook so they love coming here.

I'm making Gumbo for the main course. Must I serve it with white rice or can I use brown.

What sides would be good keeping in mind we're in the Midwest in the middle of winter.

Appetizers/dessert suggestions?

And I'm going to start another thread for the best cornbread recipes but feel free to add yours here :)
