Need help for carmel in brownies

Hi,

I'd like to either incorporate carmel into the brownies and/or on top. How do I get carmel into the brownies without it getting to hard to chew the brownies. I have some Kraft caramels....do I just melt and add to recipe or do I need to do something else? Thanks.

Sapphires, I have used my own homemade caramel sauce to drizzle through brownie batter and have used it also as a topping on brownies.

If you want to use Kraft caramels, in your brownie you need to melt them first. Probably in a small amount of milk.

Caramel Corn 2 cups brown sugar 2 sticks butter ( 1 cup) 1/2 cup white Karo syrup 1/2 stp salt Combine and boil the above for 5 minutes. remove from heat and add 1/2 tsp soda and 1 tsp vanilla and a pinch of cream of tartar. Ina Garten's recipe is, well, outrageously good, but might be a bit pricey to make for band kids. Nevertheless, the recipe makes a very large batch. You could omit the nuts and coffee if you feel you must, and they'd still taste wonderful, but that coffee really intensifies the chocolate flavor. Anything with that much chocolate can't taste anything but great. Even though it says yield is 20 large brownies, in reality they are 20 very large brownies, and it could easily yield 40 normal size brownies, especially considering how rich they are. Outrageous Brownies Copyright 1999, The Barefoot Contessa Cookbook This was adapted from a recipe for chocolate globs in the Soho Charcuterie Cookbook. 1 pound unsalted butter 1 pound plus 2 cups semisweet chocolate chips, divided 6 ounces unsweetened chocolate 6 extra-large eggs 3 tablespoons instant coffee powder 2 tablespoons real vanilla extract 2 1/4 cups sugar 1 1/4 cups flour, divided (1 cup for the brownies, 1/4 cup mixed with chips and nuts) 1 tablespoon baking powder 1 teaspoon kosher salt 3 cups diced walnut pieces Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan. Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature. Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan. Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. BROWNIES 1 cup butter or marg. 3/4 cup cocoa 4 eggs 2 cups sugar 1 cup flour 1 teaspoon vanilla 1 cup nuts (opt.) 9x13 pan (I spray with Pam) 350 degree for exactly 30 mins I like to frost mine with either in the can choc frosting or the .... MICROWAVE FUDGE FROSTING 3 2/3 cups powdered sugar 1/2 cup cocoa 1/4 cup milk 1/2 cup butter melted 1 T vanilla Combine all Put in microwave 2-3 mins. Beat until smooth and cooled a little Pour over brownies and spread out.

Caramel Sauce
=============

1 cup butter
1 cup sugar
1 cup brown sugar
1 cup cream
Pinch of salt
2 teaspoons vanilla
. Mix all the ingredients together and simmer for about 5 or 6 minutes.

Serve over Bread and butter pudding, apple pie and ice cream, warm
gingerbread, Brownies and ice cream etc..

I used to make these all the time, but haven't in the last couple of years, thanks for reminding me. They are excellent.

Caramelastic Fantastic Brownies

14 oz caramels
14 oz sweetened condensed milk
8 oz German Sweet Chocolate
6 Tbsp Butter
4 eggs
1 1/2 c Flour (sifted)
1 tsp Baking powder
1/2 tsp Salt
2 tsp Vanilla
6 oz Chocolate chips
1 c Chopped walnuts (optional)

1. Preheat oven to 350. Grease and flour a 9 x 13 baking pan. Combine caramels and evaporated milk in top of double boiler over low heat. Cover and simmer until caramels are melted, stirring occasionally. Set aside, keeping warm.
1. Combine German sweet chocolate and butter in 2 quart saucepan. Place over low heat stirring occasionally until melted. Remove from heat. Cool to room temperature.
2. Beat eggs until foamy using electric mixer at high speed. Gradually add sugar, beating until mixture is thick and lemon colored.
3. Sift together flour, baking powder and salt. Add to egg mixture mixing well. Blend in cooled chocolate mixture and vanilla.
4. Spread half of mixture into prepared baking pan. Bake for 6 minutes. Remove from oven and spread caramel mixture carefully over baked layer. Sprinkle with chocolate chips.
5. Stir 1/2 cup of walnuts into remaining chocolate batter. Spread batter by spoonfuls over the caramel layer. Sprinkle with remaining nuts.
  7. Bake for 20 minutes. Cool in pan on rack.
Refrigerate before cutting into bars or squares. These brownies are very difficult to cut if not chilled first.

caliloo, the ingredients list sweetened condensed milk; however, the instructions state evaporated milk. Will you please clarify.

I found the recipe in several places on line. Looks like it should be sweetened condensed milk. Caramelastic Fantastic Brownies

Yes, it is sweetened condensed milk. I haven't looked at that recipe in years and never noticed the typo. I will have to correct my copy.
