Rather stupid question - ruined choc chip cookies

I accidently posted this on cookware and alexr was kind enough to tell me that I probably used too much flour somehow. I used a hand mixer - does that affect the texture of the batter/cookie? Do most of you hand mix? I always hand mixed before but its been several years and i've lost some strength in my hands and wrists so thought i'd give the mixer a try. Any other technique tips or common boo boos before I try again? I have fresh choc chips, replaced my baking soda just in case, King Arthur unbleached all purpose flour. Can my measuring cups be off? I bought one of those little round oven temp things. Oh, one tray at a time in the middle?

Ok I'll admit, I don't bake that much though I really like it.

I just made choc chip cookies for the first time in a long time and they came out very cakey and crumbly and the chips didn't even really melt (they had been refrigerated a long time)

They sort of stood up, not melting into a flatter chewy cookie.

I moved to a different state recently and am in an apt.

I figured the oven temp was off and tried to check it with a digital temp thing I have, long bent metal spike with a long wire but I don't think I know how to get a good read on that either. It kept moving up and down, then would go to HI, plus trying to wait for the oven to catch up or cook down wasn't working.

Any ideas on the cakey cookies? It did seem like the batter was sort of dry or stiff. I double checked the directions. 2 sticks of butter, 2 eggs, etc.

Maybe too much flour? Or could it be the oven temp?

Anyway, they were pretty bad, i threw them into the woods for the racoons:)
