Confused About Apple Pie Jam/Apple Pie Filling
Comments (20)Well then, that must have been my problem because I did double the recipe!! I didn't realize you couldn't! I know you're not supposed to fool around with amounts in recipes so you keep the acid ratio correct, but where this was just strawberries and sugar and nothing else in the recipe I figured it was ok! I guess not! And I measured out 4 quarts of whole strawberries. The recipe was 2 quarts of strawberries and 6 cups of sugar. It didn't say to cut them or mash them before measuring - in fact (I'm remembering off the top of my head here as I don't have the book with me) it said to crush the strawberries one layer at a time and then to mix with the sugar, so it sounded to me like you measured the whole strawberries, then crushed them and that's what I did. I'm not going to fuss with what I already made - as I said, it won't go to waste as hubby will use it as pancake topping - we've even been known to plop a spoonful of jam in a bowl of oatmeal, so this stuff will work for that as well. But I'm glad I spoke up because for future adventures in jam, I wouldn't have known any of this and would probably have given up on it if I kept failing! And I thought it was weird that the jam recipe that used the pectin used an extra cup of sugar from the one without pectin. I've learned so much from just this thread - thanks so much guys! I want to take my next adventure into the realm of peaches! Peach jam sounds yummy and if I fail again, hubby does like peaches, so he'll have more pancake topping than he knows what to do with lol!! Here's Tina's recipe for the Pie, my recipe for the Crust follows. _________________________________________________________ Chocolate Chess Pie 1/2 stick of Butter, partially melted 1 1/4 c. Sugar or Splenda/Sugar mix (comes in a bag) 3 T. Cocoa 2 T. Flour 2 Eggs 3/4 c. Milk 1 t. Vanilla One uncooked Pie Shell. Whisk the sugar, eggs, milk, vanilla & butter. Add dry ingredients. A whisk is all you need. Pour into Pie Shell. Bake 35-40 min. @ 375. You can pretty much tell when it's done just by looking at it. It looks like a big Brownie coming from the oven, then it flattens like a Pie. SO EASY. _______________________________________________________ Butter Flaky Pie Crust (tips below) 1 1/4 c. Flour 1/4 t. Salt 1/2 c. Butter, chilled and diced 1/4 c. Ice Water In large bowl combie Flour and Salt. Add diced Butter and mix until it resembles crumbs. I use one of those dough thingys to do this, I can't remember the name of the gadget. lol Or do it with two forks. Stir in Water, one Tablespoon at a time until mixture forms a ball. Wrap in Saran Wrap and refrigerate for 4 hours or overnight. __________________________________________________________ Tips on Crust. My finished dough ball looked a little too crumbly but I didn't feel like starting over. After you get it out of the fridge, take it out of the saran wrap and let it get too room temperature, or close to it. Lay on lightly floured surface, and make sure to flour your rolling pin. Flatten out to fit the pie pan. I did my dough on Parchment Paper & it tried to stick! Trim excess dough off edges of pie plate with a knife. That's where some of my crust started falling apart, and I just used fallen off dough in spots to fill in. I also lightly poked some holes in the crust with a fork, some of the batter got between the crust and plate, but it came out of the pie plate sooo smoothly and didn't stick. Comments (21)This is, hands down my favorite dessert ever. It's an old Pillsbury bake-off winner that my mom has been making for close to 30 years. A couple of changes-I never, ever use raw eggs. Too risky. Instead I pick up some egg beaters. Also if I'm in a hurry I just use a container of cool whip instead of whipping cream. I describe this to people as a frozen peanut butter mousse with a peanut butter crust and chocolate swirls. MARBLE - OUS PEANUT BUTTER DESSERT 1/2 c. firmly packed brown sugar 1/2 c. peanut butter (I use crunchy & it is great!) 1/4 c. butter, softened 1 c. flour 1 c. (6 oz. pkg.) chocolate chips FILLING: 1 pkg. (8 oz.) cream cheese, softened 1/2 c. sugar 1/4 c. peanut butter 1 tsp. vanilla 2 eggs 1 c. (1/2 pt.) whipping cream, whipped & sweetened In small mixer bowl, cream brown sugar, peanut butter and butter until light and fluffy. Add flour; blend until crumbly. Sprinkle into ungreased 13 x 9 inch baking dish. Bake at 350 degrees for 10-15 minutes until golden brown. Set aside half of crumb mixture (about 1 cup) for topping. Lightly press remaining crumb mixture over bottom of pan. Prepare filling. Pour over crumb mixture in pan. Melt chocolate chips; drizzle over filling. Gently cut through to marble. Sprinkle with reserved crumbs; press in slightly. Freeze at least 2 hours or until serving. Remove from freezer 10 minutes before serving. Filling: In small mixture bowl, combine cream cheese, sugar, peanut butter and vanilla; beat at medium speed until smooth and creamy. Add eggs, one at a time, beating well after each. Comments (8)June, my old instructions say to use 1 1/2 cups of milk in place of the regular 2 cups (in a small box), so the filling will stay firm enough to cut. I started using two boxes to fill up the pie shell. I have a homemade from scratch dark chocolate pie that I like, but the kids always liked the chocolate fudge pudding mix, not the instant, the cooked stuff. A dollop of whipped cream and a drizzle of caramel ice cream topping, along with a sprinkle of pecans, makes it a turtle pie. Some hot fudge topping and a cherry makes it a chocolate sundae pie.
