Your best recipe for chocolate meringue pie?

Growing up, I always wanted to have chocolate meringue pie instead of a cake for my bday. I cannot make one to save my life. It always ends up runny. Do you have any T&T recipe can you offer?

Here is our favorite for chocolate cream pie. After the filling has cooled, you can make a meringue and spread on top and brown in broiler. We do not care for mergine so I never do that.

Allene RogersÃ¯Â¿Â½ Chocolate Cream Pie

1 1/2 cups sugar (3cups)
6 T cocoa (Allene says 1/2 cup, but we prefer 6 T) (3/4 cup)
3 T cornstarch or 6 T flour (6T or 12T)
3 cups milk (6 cups)
3 egg yolks, mixed (6 yolks)
1/4 cup butter or margarine (1/2 cup)
1 1/2 t vanilla (3t)

Thoroughly mix sugar, cocoa, and cornstarch in saucepan. Add milk and eggs. Cook over medium heat, stirring constantly, until mixture thickens and boils. Pour into baked pie shell. Makes 1 9" pie. Amounts in parentheses are for making two pies).

First of all....make and blind bake a 9 inch pie crust....using butter for the shortening.
Next make the filling
1 c. sugar
1/4 c. cocoa
1/4 c. flour
2 c. milk ..or 1 cup milk and 1 cup half and half
2 egg yolks, well beaten
1/4 tsp salt
1 tbsp. butter
1 tsp. vanilla

Mix flour, sugar and cocoa and place in a double boiler.
Beat eggs and milk together with salt
And mix with the dry ingredients. Cook stirring constantly over boiling water until thickened...it should come to a "plop plop" sort of boil.
Remove from heat.....add butter and vanilla stir about 3 minutes to cool a little and pour into the pie crust.
Make meringue of the 2 egg whites
Beat to soft peaks, adding a pinch of salt
When egg whites are soft peaks, add 4 T. sugar, superfine is best, and beat until sugar is dissolved....pinch a bit in your fingers to feel if it's still gritty.
Put meringue on pie being sure to spread all the way to the crust, and bake at 325 until just browned about 15 minutes.

I finally got around to trying my idea. I didn't bother with making a crust, too hot to turn the oven on, so I decided to double the recipe and call it a pudding...lol I used an 8 oz can of crushed pineapple, 1 1/4 C orange juice and a cup of apricot nectar. Since I didn't need meringue I used whole eggs (beat well). This stuff is very tasty and needs to be chilled. I love it! Sitting here eating the rest tonight while posting this. Only thing I might try when I make the next batch is to add a little grated orange rind, just for stronger flavor. No whip cream on hand or I would be having some on this right now. Nancy

Also you really need to push the meringue into the crust so that the filling is completely covered, moisture from filling might cause it to weep. My 1st thought was too much sugar & it has to trickle in as your mixer is going. Totally flattened might mean a humid day. Can't make candy with egg whites on a rainy or damp day. I've had the egg whites seem to be OK but then fall flat before I could mix it in with the syrup. I think they use a stabilizer in bakeries so it doesn't fall.

Someone posted this last year. I made it and it's very good. It's a nice firm filling. GRANNY'S CHOCOLATE MERINGUE PIE Make and/or bake crust until golden, 450Â° about 9 to 12 minutes. Remove from the oven and cool completely. Filling: 3 oz. bittersweet chocolate, chopped 1 cup sugar Â¼ cup cornstarch Pinch salt 3 cups milk 3 eggs yolks 1 tsp. pure vanilla extract 2 Tbls. butter In a saucepan, combine the chocolate, 1 cup sugar, cornstarch and salt. Mix well. Stir in the milk. Place the pan over medium heat and bring the mixture to a gentle boil, stirring occasionally. Cook for 3 minutes, stirring constantly. Beat the egg yolks. Add 1/2 cup of the hot mixture to the egg yolks and mix well. Add the mixture back to the saucepan and continue to cook for 2 minutes. Remove from the heat and stir in the vanilla and butter. Pour the filling into the prepared pie shell and cool completely. Cover with plastic and refrigerate until chilled. Topping 3 egg whites Â¼ cup sugar Beat the egg whites, on medium speed, until soft peaks form, about 2 minutes. Add the remaining sugar and continue to beat until stiff peaks form. Spread the meringue evenly over the pie. Place in a preheated 350Â° oven, on the top rack and bake until golden brown, about 10 minutes. I don't know who granny is, but she makes a good pie!

I made Colleen Oz's cake, and it was delicious! I thought something might go or be wrong, because it was too easy - just add the ingredients in order and mix. I thought cake was supposed to be much more persnickity, shall we say, than that, with whipping air into the batter at the right time, and not whipping it at the wrong time, Anyway, I'll be adding that one to my T & T collection. The icing didn't work well, but that was my fault. I was trying to do too many things at once, and it turned out too dry. I just wasn't paying close enough attention to my measuring, and skipped the sifting, and probably over mixed it. Even with doubling, it barely spread across the middle and top of the cake. Other than that, things went fine. Thanks for the recipes! Sally

Thanks y'all!

I made it almost pretty much like both recipes. The end--low, 300 I think, and 15 minutes.

What I did different was an oatmeal crust. That part is good. It's the filling. It looks good and right. Then, I put on the meringue and brown it.

Wonder maybe if I just brown it via torch or under the broiler if that might not help. Looks like I am at least on the right track!
