A chicken batter thats extremely thin and great!

Tonight I am cutting up a Cornish hen for frying because sometimes I really like it that way, and besides, I don't have a regular chicken.

I don't have any problem with my regular way of flouring with salt and pepper.

However there is a restaurant near me that has a buffet. On this buffet is fried Cornish hen with a batter that is "VERY" thin, you can practically see right through it! It is a hard batter that tastes like 'Honey" but there are absolutely no signs of burning. If you tap on a piece of the chicken it actually makes a "Ticking" like sound sort of like tapping on a pan, but not that dramatic of course! I really don't know how to describe it other thanI have also seen it done on "Shrimp".

There is absolutely no way they will explain how this batter is made to me, so that is totally out!

Anyone have any ideas or know what I'm talking about?
