Wheat Free Lemon Bars..I have 3 small meyer lemons that need to be used up..

I'm going to attempt them after I return from picking up #1 son.

~I've already made hubby Glenda AL's sourcream banana cake today.

Hey, terri, you need to try this next :o)

Jamaican Jungle Bread
1 1/2 cup flour, all-purpose

1 cup 3 minute brand quick oats

1/2 cup sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup flaked coconut

1/2 cup walnuts or almonds or pecans, chopped (toasted)

3 bananas, mashed

8 oz crushed pineapple

1/4 cup vegetable oil

2 eggs

Mix flour, oats, sugar, baking powder, baking soda, cinnamon, salt, coconut and nuts in a large bowl. Mix bananas, pineapple, oil and eggs in a medium bowl. Add all to large bowl and stir, but not too much. Bake on a greased pan at 350 degrees for 50 minutes. For the glaze, mix 1/2 cup of confectioners sugar with 1 Tb of butter and add either 1/2 ts coconut or vanilla extract. Add 2 ts of milk. Pour this glaze over the bread. Makes one loaf.

Thanks Glender it sounds good..but right now I'm not using wheat..and I've not totally figured out converting my own recipes. But I'll c/p it and save it, maybe for Easter Guests.

The top's got this crispness to it, then the middle is pudding like and the crust is a bit crumbly..the recipe asked for and egg in it and I forgot. DUH~

Here's the recipe for those that want a Gluten Free Lemon Bar.

1 c gluten free flour mix
1/2 c almond meal/flour
1/4 c confectioners sugar
pinch salt
1/2 t xanthan gum
1 1/2 sticks of butter, chilled

Blend dry ingredients, then cut in butter to pea size. Blend in 1 egg. Press into 9x13 pan and bake at 325F for 30 minutes.
Meanwhile, juice 4 lemons and zest one. (I actually zested 3 sm Meyers, juiced them plus added the juice from a regular lemon too. was about 1/2 cup.)
3 c sugar (I only added 2. I added 2 then tasted.)
6 eggs
1/2 c GF flour blend
Combine juice, zest and sugar. Add in eggs and mix well. gently add in flour.
Pour over baked crust, put back in the oven dropping temp to 300F, until firm. (Top did not brown.)

Gluten Free Flour Blend
1 c white rice flour
1 c brown rice flour
2/3 c potato starch
1/3 c tapioca starch
1 T sweet rice flour (optional)
Whisk well.

jellibean, very few hobby growers attempt to develop their own hybrids, for several reasons. First off, most hybrids are only average at best. Norwood, no, the attempt to develop cultivars is usually done with a strongly monoembryonic citrus crossed with a polyembryonic cultivar, It will take many, many attempts, to create multiple hybrids, then you're going to need to wait between 5 and 20 years before your hybrids fruit. Jellibean, most of us enjoy growing "tried and true" cultivars, even rarer ones, because, in the past, there have been plenty to choose from. With the introduction of the Asian Citrus Psyllid carrying Huanglongbing (HLB, or Citrus Greening Disease), the wide variety of cultivars we have enjoyed in past years have significantly dwindled. Not to discourage you, but it's an arduous task, and you need to have a lot of land, time, and patience. To specifically answer your question about kumquat crosses - there are a few out there. All I have come across are not good eating. I have a beautiful Indio Mandarinquat that produces lots of very pretty and inedible fruit. I suppose I could make marmalade of out it. Hi B. You have definitely done alot of hybridizing work! I am truely a newbie at it. I have had little experience with grapes. We had a beautiful arbor here which was destroyed on the Inagural Day Storm..the year Mr. Clinton was sworn in. Probably the worst windstorm in modern history for our area. The arbor had table grapes..a red, a purple and a white. Of those, we have kept one, but use it more as an ornamental, keeping the vines quite short. However on the south side of the house, we have a Lemberger grape given to us by a commercial grower of wine grapes in Prosser, WA. The wines made from this grape are very good, but we just grow it as an ornament on a trellis. It actually yields quite well, but it has alot of seed so we don't eat or juice it. I don't know much about growing/propagating vitis, but if you would like some cuttings I'd be happy to send some. It does suffer from mildew as the weather gets hotter in August/Sept. We trim out leaves to give it more air, etc. It is a lovely leaf. Your work in attempting to breed a disease resistant vitis is very appealing! It would be a huge, and important advance for viticulture. I would love to work with columbines to try and develop a variety with some resistence to leaf miner. There is a species Columbine that has shown some resistence to the pest, but I have yet to fine a source of the seed. They don't hurt the plants, so they say, but they certainly do blemish the otherwise beautiful leaves. Do you have a system of record keeping for your hybridizing work? I assume you do. I'm wondering if you could post it? I have notes scattered all over the place, and really do need a system! Great to hear from you. Keep us posted. By the way...my husband would love the Salmon Berry Raspberry x should you succeed at that. I hadn't even heard of Pluots! Sounds delicious! SAM

No matter what, Tanya, in the hosta market, today--it's a risk when you buy one. Don't worry about it--if it's HVX you will know in a few years, for pretty sure. Just make sure not to cut scapes with the same knife or scissors you just cut another with. And, if you dig and divide, make sure you also clean the shovel and or knife (after and between digs) with a fury, with Dawn dish detergent and a bleach solution. With the nematodes--in my opinion, it's a worse problem. But--what are we going to do--give up our passion? Nope, we'll just have to 'deal with it'!!! Enjoy what you've done!!! I've gone through the hysteria of nematodes and the frustration of HVX--and I think I'm beginning to mellow. The nematodes I found the other day--didn't get 'nuked' this time, like the leaf I showed above (my first discovery on a newly purchased 'Sugar and Cream'). In fact, I'm so cool about it--it's still in that card-board box up on the deck! I feel sorry for it!! But--not for the 'nems'!!! I hate that they are such a problem--and my graphic is from the previous experiences, but I just posted it for fun this time!! I'm not nearly as 'freaked' as before--but still miffed at the seller for selling it--because it was a problem she saw--and felt she had to conceal, whether she understood what it was or not! That, to me, shows a lack of integrity--which I value very much in anyone, whether they are selling me something or just being a friend--be honest, sincere, kindly forthright and patient with me--cause we all are 'a work in progress' on some level! :o/ Did I mention I just can't abide someone who 'flatters' which translates to be someone being very ingenuous--hoping to impress me and with an ulterior motive--that I always wonder about!!! I have an island that's about the same size as yours, with seating for 4 (5 could, and have, fit). My dining room table is not 6 feet away in the same room. We love it. We usually eat at the island. It's a casual, comfortable spot. But, when we don't eat at the island, there are usually guests. My dining room table seats up to 10. There is usually tons of food, because I like to cook and guess where all of the stuff that won't fit on the table goes? Yep, the island. It also makes a spectacular and easily accessed buffet, or a "kids table" at Thanksgiving. There is also no formal dining room in my house--the island and the table to the side, that's it. We are pretty casual bunch. No regrets here, we like it. I like backs on my island chairs because I think it's more comfortable that way. To each their own, right? My $.02, too. :-) Cj

1/2 t xanthan gum

Terri, I googled the xg - Gum, Xanthan is used by people who are allergic to gluten to add volume and viscosity to bread and other gluten-free baked goods. It is made from a tiny microorganism called Xanthomonas campestris and is a natural carbohydrate. I wonder if that small amount could be left out?

I'm thinking of my gfree friend with these bars but don't want a whole supply of something I'd never use again, e.g. the x-gum. Maureen

Well Maureen..I guess you can leave it out..however, you'll not get much of a rise..but then again..I didn't either..because I forgot the egg..if you don't use the xanthan, than DON'T forget the egg. LOL I'm sure it would be fine actually in this recipe..if it were bread or cake, I'd say no way.

You can also sub Guar Gum..but again, something you wouldn't use often.

The crust is a bit thick, as I did it in a 10" square versus 9x13.

You can see how the top got crispy. That does NOT have powdered sugar on it.

It looks really good. Yes, the tops did not brown. Could you, if you really wanted to, take a torch to it, or broil it a bit? I know that wouldn't be browning it per se, but it might make that "crispy top" a crunchy treat???

Robin, I have made lemon bars before, and always had a brown edge and just a thin layer of skin on the top..these are the first ones that have an actual "crunch" to the top..and I love it. Even if I don't remain wheat free..I'll use this recipe to make lemon bars. And the Meyer lemons make the most wonderful filling! It's not pungent tart..it's sweet tart..and I'm so glad I tasted the juice/zest and 2 cups of sugar before adding the 3rd cup! Otherwise they'd be sweet with a hint of meyer lemon flavor.
