Knox gelatin in soup?

I go through a lot of trouble making pots of stock that I freeze. I get large quantities of beef bones and chicken feet and boil the h*** out of them.

While making a gelatin desert with Knox gelatin powder, it occurred to me. Why can't I just use this stuff in my soup? I'd never heard of anyone doing this. My philosophy is: If no one else is doing it it is either a really bad idea, or it's brilliant.
