Winter Salads

Do you have a favorite? I was talking with David about wanting to eat some salad and he mentioned he doesn't want salad in the winter. I noticed the Napa cabbage looks really good in the store right now, and I thought a Chinese Cabbage Salad sounded kind of good. Another I really like because pears are in season is this one, with Blue Cheese Dressing.

What are your favorites?

Pear, Pecan, Bleu Cheese, Gorgonzola Salad

1/2 - 1 head green leaf lettuce

1/3 cup chopped pecans, toasted

2 pears, chopped

1/2 block bleu cheese, crumbled (2 oz.)

1/2 package gorgonzola, crumbled (2 oz.)

1/2 cup dried cranberries

Simple Balsamic Vinaigrette Dressing

3 tablespoons aged balsamic vinegar

1 garlic clove, peeled and crushed through a garlic press

3/4 cup extra-virgin olive oil

Salt and freshly ground pepper, to taste

Use a blender to mix the ingredients to produce a thicker vinaigrette. (One serving will equal 2 to 3 tablespoons of dressing.) One cup should easily be enough for 6 to 8 servings of mixed green salad. Refrigerate and store in a covered container. Whisk well before serving.
