Electric Cookers.

A couple of threads on Crock pots, slow cookers.

With the exception of microwave ovens and induction cook tops, all electric cooking appliances work with two devices, namely resistive heating element and a thermostat. Some thermostats are controlled by a timer.

A baking, roasting, toasting or grilling appliance allow the thermostat to go above 212F, and a pressure cooker allows the temperature to go slightly higher than 212F.

How low can you adjust the cooking temperature? It depends on the thermostat design.

Typical thermostats are bi-metal SPST (single pole single throw) switches which turns the heating element either full on or full off, there is no "low" setting. The resulting temperature can range as much as 40F from your dial setting. It also can be effected by room temperature. The frequency of ons/offs determines the resulting temperature.

Some thermostats may be electronic (thermister or thermocouple) driven mechanical relays, which behaves like a bi-metal relay, but a little more accurate. Some electronic thermostats can drive a solid state (controlled silicone rectifier, full wave) relay which can in fact throttles the heating element.

Slow cooker is not a correct name; it actually is a low cooker. If you have a gas oven with a reliable low flame, any pot can be a slow cooker.

Also if you have an electric cook top that can go very low temperature, any pot can be used as a slow cooker. Same as a roaster oven if it can be set to very low temperature.

If you are thinking about buying a slow cooker, look into buying an electric pressure cooker that can be used as a slow cooker, or a roaster oven which can go very low temperature.

If you have a slow cooker, Crock Pot, roaster oven or a portable electric cook top which cannot be set to very low temperature accurately, you can buy a router/motor speed control to control these appliances. A router/motor speed controller can provide continuous temperature adjustments from 0 to full on.

The controller cannot work with any cooking device which has digital electronics or a roaster oven which has a convection fan. The controller costs about $20.00 from eBay, Amazon and Harborfreight. It has many other interesting uses in the kitchen which I haven't had the time to share yet.
