Sounds sort of like a steak and edible offal pie we make during hunting season.

Venison stew meat, heart and liver (I don't eat the heart/liver but DH loves it - it's just a texture thing with me), some carrots, parsnips, boiling onions, etc. with a rich brown gravy baked in a pie crust. Usually we add sherry, maybe some fresh rosemary if I haven't killed the plant yet, or whatever herbs I have put up or are still growing.

Yummy stuff. I never thought about saving the intestines, stomach, tongue, etc. - not that I would, but someday it might be good to know they are indeed edible (I didn't say appetizing :-)

Of course, they're edible, malna, and even good when prepared correctly. Grandma always cooked beef tongue for Dad for sandwiches, and "natural casings" on hot dogs and sausage is just intestines, usually pig or sheep. The hunters here always want the hearts of venison or whatever to pickle, that's kind of lost on me but whatever.

Humble pie? Grandma used to make a savory version with leftovers of liver and bits of roast, she probably put the end of the tongue in there too. To me it seemed a lot like mincemeat (the traditional mincemeat with beef and suet) but without the sugar and raisins. She just minced everything up so you never knew just what it was you were eating, LOL, and stuck it in a pie crust, baked it like pot pie.

I'd forgotten about it until you posted. I think it was just another way of using up bits and pieces of animals that we wouldn't eat otherwise and we ate just about everything. Now that I think about it she probably put the oysters (testicles) in there too!

Another way we used heart and tongue, incidentally, was to put it through the meat grinder with onion, then season it and mix it with mustard and mayo for "sandwich spread". Yup, a childhood memory I don't really miss much, LOL.

I never knew there was a real humble pie...I thought "eating humble pie" was just an expression where someone has been taught a lesson in humility...

I'm so surprised of how many people didn't even know that this food existed. I posted this question on another forum and they didn't know about it neither.

Lars, I wish I could get humble pie from Humble. Then, I wouldn't need to make one :]

I think, you can pretty much prepare humble pie with a filling that is similar to beef stew and without any animal internal organs. I think that's what I'm going to do.

I never realized the background of "humble" pie, I figured it was made from the bits that the farmer ate because it couldn't be sold, so that's where "humble" came from. Humble ingredients for humble people. Yes, indeed, wrong again, LOL.

I was just kidding on the adventure thing. Actually, I think it would be much more difficult to find things like tongue and heart to put into a "humble" pie, than it would be to just use beef anyway.

You're too funny Annie. Actually, I grew up eating all those stuff. It's a cultural thing in my case, (Asians).

Although, we have plenty of local stores that sell animal inernal organs here, I don't often go there. Some organs need to be cleaned out properly in order to be prepared safely for food such as the kidney.

I'll settle for beef pot pie then :)
