Portion question - help really needed

Hi all - I'm a long time lurker, but a school project is forcing me out of lurkdom, and I'm hoping for any help you can offer. My daughter had to pick a state for her 5th grade project and prepare a report. Part of the presentation is to provide a "taste" of your state to the entire school (roughly 200). It is supposed to be a small (think one ounce little cup) portion. Her state is Idaho and she asked for potato salad. I've just realized that the presentation is THIS Friday. I am confounded on how much potato salad to make to provide 200 very small portions - have any of you experienced anything like this? (I've never bought potato salad, but am also considering that given the timing involved...).

If I look at an average recipe that is supposed to serve 6 - 8, how many "bites" would you figure that represented? Any thoughts/input would be so appreciated.
