Looking for T&T recipes for braising

I realize my other posting about braisers didn't quite say what I wanted. So if you have recipes you really like for braising I'd be most appreciative if you would share.

It would be difficult to find a better braised dish than Beef Daube. I made it last week for the first time. It was a big hit with me, my daughter and my son-in-law. As the recipe description says, "I have no idea what makes this recipe so much better than any other beef stew, but it is."

I wouldn't call it a stew or a pot roast, although it has much in common with those. Also, I rarely follow a recipe exactly and I suggest you don't. Let your good judgement and cooking experience prevail.

Incidentally, Google "brasier" and then "daubiere" and tell us what you find about these cooking utensils. Interesting, eh?

What a good way to "break in" my new brasier. Looks and sounds terrific.

Very interesting "pots", daubiere's whichever.

Thanks, Jim and I have everything I need on hand except the meat.

This is a tried and true recipe. One I have been making for over 25 years. Boston Cream Pies are best made the day before or early in the day so that the cream filling has a chance to meld with the cake. Home Cookin Chapter: Recipes From Thibeault's Table Boston Cream Pie ================ 1/3 Cup butter 1 Cup sugar 1 egg 1 1/2 Cup sifted all-purpose flour 2 1/2 teaspoous baking powder 1/4 Teaspoon salt 2/3 cup milk 1/2 teaspoon vanilla . Cream the butter and sugar until light and fluffly. Add the egg and beat until creamy. Sift the flour, baking powder, and salt together. Add alternately with the combined milk and vanilla. Turn the batter into a greased and floured 9-inch round layer cake pan. Bake in a 350Â° oven for about 30 minutes, or until the cake springs back when lightly touched in the center. Cool on a rack for 5 minutes, then turn out and cool completely; Place the cake on a serving plate and split horizontally into two layers with a serrated knife. Carefully remove the top layer. Fill with the chilled Cream Filling. Replace the top half and pour the warm Chocolate Icing over the top, spreading only to the edges. Chill. (When allowed to stand for several hours, the filling seeps into the cake, making the cake and filling seem almost as one.) Cream Filling 1/2 cup sugar 3 egg yolks 3 tablespoons flour 1 tablespoon butter 1/4 teaspoon salt 1/2 teaspoon vanilla 1 1/2 cups milk Combine the sugar, flour, and salt in a saucepan. Gradually stir in the milk. Cook over low heat, stirring until the mixture comes to a boil. Boil, stirring for 1 minute. Beat the egg yolks slightly. Gradually stir in about half the thickened sauce. Return to the heat and cook. stirring 2 or 3 minutes longer to take away the flour taste. Remove from the heat and blend in the butter. Strain into a bowl. Cool for a few minutes, then blend in the vanilla. Cover and cool, then chill. Chocolate Icing 2 squares of chocolate 1 cup sifted icing sugar 2 tablespoons butter 1 tablespoons hot water 1 teaspoon vanilla Melt the chocolate and butter the microwave on medium low power. Stir until smooth, and blend in the icing sugar and hot water. Stir until smooth and slightly thickened (do not beat). Stir in the vanilla. Use immediately. Looking for T&T Recipes for picky eaters

I was not a picky eater as a child, but now I am. I don't like certain textures, things like Jello will make me fight to swallow instead of gag. Neither of my kids were very picky, but Ashley liked (and still likes) more sweet stuff and processed food than her sister. She'd do things like sit down with a can of cream of mushroom soup and eat it right out of the can. She still prefers white bread and would be as happy living on fast food as she would be with filet. My granddaughter first ate everything, then became very picky, now she's becoming more adventurous again. I told her to try new things, if she didn't like it she could spit it out, she didn't even have to swallow. That got a lot of new foods into her mouth and she liked some of them. She just wanted to know that she had the option, I guess. She is also funny about texture, even when she was a baby things like pudding and mashed potatoes would make her gag. She still won't eat mashed potatoes. My grandson is an eating machine. He'll eat anything except green beans, he hates those. His problem is that he will eat until he gets sick, if it's one of his favorites. So what to feed picky eaters? I'd start with what they like, and try to branch out. He likes chicken? How about some BBQ sauce? I ground Doritos in the food processor and made chicken nuggets, those Doritos became seasoned bread crumbs. He likes pasta? What does he like on it? If it's plain, could you get away with some cheese? That cheese could eventually include some seasonings, maybe some bacon. I never met a kid who didn't like bacon, for some reason. Many kids like things they can dunk. My granddaughter still won't dunk a french fry in catsup, she hates sauces. My grandson dunks everything in catsup, BBQ sauce or ranch dressing. I think it depends on the child. I wouldn't fight over it, but if you can ease some new things into his diet, he might not even notice. Or, you might get lucky like I did on Halloween. I made some butternut squash bread, which both the grandkids love. There was some squash left over. Amanda came in, added some butter and brown sugar and heated it in the microwave, then ate a bowl of it. Bud suspiciously eyed what was left and asked me what it was. I told him that it was so good that his mother didn't share it, she was being selfish. He took me very seriously and quietly finished off the bowl, then told his mother that he'd eaten the rest of "her" squash. She told him that was OK, she'd make more for HERSELF tomorrow. He promptly announced that he'd eat that too, LOL. Sometimes a kid just wants to be obnoxious. (grin) Annie

Rookie Doughnut Makers Looking for T&T Recipe & Tips

Although all-purpose flour has commonly been used for making raised yeast doughnuts I suggest bread flour. But when it comes to cake doughnuts (leavened with baking powder), you want lower-gluten flour, so try them with cake flour. I like to make mine with low-gluten spelt flour. Keep mixing to a minimum so you don't get a lot of gluten development. Deep frying hints: -Temperature of the fat, the temperature of the food, the amount of fat in the fryer, and the amount of food are an all-important mixture to be considered. -When the food is fried at a high temperature, the item browns quickly and needs to be taken out of the fat before it runs out of moisture. When it runs out of moisture, it begins to soak up fat and get greasy. -The shorter the frying time, the less fat is absorbed. -You need enough fat in the fryer to maintain the temperature when the food is added. If too much cold food is added, the temperature will drop. So don't overload your fryer. -Use a fat with a smoke point much higher than the frying temperature. -Old helpful hint - Add 1 T. vinegar or 1 t. ginger to oil before heating. This prevents the dough from absorbing too much grease while frying. -Something interesting to do with the doughnut holes: (source: Recipes from the Old Mill) Doughnut Hole Sticky Muffins (make with raised dough) Grease 12 muffin cups. In the bottom of each cup place 1 T. brown sugar, 1 t. light corn syrup, 1/2 t. water, and 1 t. chopped nuts. Arrange 4 doughnut holes in each cup. Cover with plastic wrap (or a cloth) and let rise until double. Bake at 350-degrees F for about 20-25 minutes. Carefully invert pan as soon as they come out of the oven on a parchment paper lined baking sheet. -You can also bake raised doughnuts. Cut the dough with a doughnut cutter that has a large hole. Place on a greased cookie sheet and let raise until light. Bake at 375-degrees F for about 12-15 minutes. I got this from a Bobby Flay program several years ago: 1 egg, beaten 1 cup ice cold water 2/3 cup flour beat the egg with the cold water, then add the flour. (you may add herbs or spices with the flour.) You may need more flour to get the right consistency. You want it to be thick enouugh to coat the back of a spoon. Keep the mixture very cold. Dip and coat your vegetables, shrimp, even squash blossoms in the batter, fry in hot oil, and drain on paper toweling.

I posted a link to Orangette's blog, she has a lot of recipes and posts on braising. She's a great read. Scroll down to the vegetable category for the most on braising. The only one I have made is the Braised Red Cabbage. I have to say I don't really have the patience for braising, even though the end product tastes good.

lpink, I saw several other recipes that looked interesting as well, not all were for braising. Both the braised cabbage recipes will get a try. We love cabbage and I just made a huge pot of creamy cabbage soup last week. I want to try one of the variations of Hasselback potatoes too.

Braising is simply cooking slowly with some moisture.
You can braise carrots or pork roast, or lamb shanks or cabbage or onions.
Take the food in question, put a little fat of some sort...olive oil, butter, suet....whatever.....and brown the food a little on the outside. Than add the liquid of choice, not too much, just 1/4 inch on the bottom of the pan, cover and either put into a low oven or cook slowly on the stove top.
Add seasonings as you see fit and cook until tender....works for cabbage or spare ribs....and is a great way to cook both together.

I agree with Linda except for "brown the food a little". I brown it a lot.

I would also add that you need to keep your eye on it when cooking with such a small amount of liquid and be prepared to add a little more if necessary.

And a bit of thickening can be good. If you dredge the meat in flour before browning (and I usually don't) there will be enough starch to thicken the juices. Otherwise, a little tomato in some form will do it.

Braised lamb shanks. Mmmm.
