Looking for T&T Lacy Oatmeal Cookie Recipe

Today is oatmeal cookie baking day. I'm either really ambitious or just plain nuts because I plan on making AnnT's oatmeal cookies, a friends orange oatmeal cookies, a healthier version of oatmeal cookies and a lacy oatmeal cookie.

I've never had lacy oatmeal cookies so any recipes or tips would definitely be appreciated.

oh my goodness, i have not made these in ages.
you must have perfect timing
and get them off the cookie sheet as soon as possible
and then wrap the hot cookie around some thing round...like a rolling pin or a custard cup....then you can add something yummy inside the shell.
Preheat oven to 350ÂºF. Spray cookie sheet with vegetable pan spray.

In large bowl, cream butter and sugar with electric mixer. Add vanilla; mix well. Stir in flour and salt, mixing until just combined. Stir in oats.

Scoop level tablespoons of cookie mixture onto prepared cookie sheet, about 3 inches apart (cookies will spread during baking). Place piece of parchment paper over balls; using bottom of glass, gently press each ball to form 1Â½-inch rounds. Carefully remove parchment paper.

Bake 11-13 minutes or until cookies are golden brown. Remove from oven; Carefully transfer cookies to cooling grid; cool completely.

If desired, sprinkle confectionersÂ sugar over cooled cookies before serving. Store cookies between sheets of parchment paper in airtight container at room temperature for up to 1 week.

Makes about 24 cookies.

Thanks so much for the recipe and tips Linda. I didn't get to them yesterday but I will soon. I really wanted to try them, but my daughter wanted to go outside to play since the weather was nice.

Well, I'm sitting here eating your cookies, Roselin, and have to say thank you for a delicious new recipe. These are really delightful, crispy, great flavor and texture. They're sure to become a standard in our house. I wondered as I was shopping for ingredients what would happen with substituting regular oatmeal or as Lorna mentioned, Irish oatmeal. --Palm sugar is a low-glycemic sugar made from the sap of the Palmyra palm tree. It works like sugar in cooking and baking and has a caramel-like flavor, and is a tawny brown color. I order it on-line from several different places (currently using NAVITAS organic palm sugar). You might want to check with your health care professional before using this. I have several friends with diabetes who can't use Splenda (one friend ends up in the hospital each time she is unknowingly served Splenda) and use palm sugar in moderation without any problem. But each person is different. --Another sugar substitute I've been trying is SWERVE (made from Erythritol). This product is safe for diabetics. --Almond flour is made from ground almonds. It is high in protein (6 g. per 28 g. serving) and low in carbohydrates (6 g. per 28 g. serving). I purchase it in 5-pound bags from Honeyville Grain Farms (http://store.honeyvillegrain.com/blanchedalmondflour5lb.aspx), but I also sprout and dry whole almonds and grind my own in my little Wonder Mill, Jr., as well as using almond pulp leftover from homemade almond milk I make. I dry the pulp in the dehydrator or use it moist. I make cookies, crackers, and there is even a recipe for Almond Pulp Freezer Fudge I'm going to try. Check out Elana Amsterdam's web site (www.elanaspantry.com) for recipes using almond flour. I've about worn out her cookbook "The Gluten-Free Almond Flour Cookbook". She uses agave nectar in most of her recipes, and that's another low-glycemic sweetener you may want to check with your health care professional before using it. --Coconut Flour is a high fiber, low-carb, gluten-free alternative to wheat. You can find lots of recipes using it on-line and I love the book by Bruce Fife, N.D. "Cooking with Coconut Flour". Most of the recipes can be made with alternative sweeteners. Diabetes is rampant in hubby's family, so I work hard at making foods that will hopefully help prevent him from ever getting it. I'm surprised no one posted Ann T's recipe. It's wonderful. At the request of my DSIL, I add chocolate chips now, so he gets to eat both of his favorite cookies at the same time. Home Cookin Chapter: Recipes From Thibeault's Table Oatmeal - Best Oatmeal Cookies ============================== 1 Cup butter (2 sticks) 1 cup sugar 1/2 cup packed brown sugar 1 egg 2 teaspoons vanilla 1 2/3 cup flour 3/4 Teaspoon baking soda 1/8 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon cinnamon dash nutmeg 1 1/2 cups rolled oats 1 cup golden raisins 1 cup semisweet chocolate chips Optional: cranberries, nuts, or whatever appeals to you. Preheat oven to 350Â° Cream butter and sugars together until light and fluffy. Add egg and beat until smooth. Add vanilla Combine flour, soda, baking powder, salt, cinnamon and nutmeg. Stir into butter mixture. Add rolled oats. Gently mix in raisins/chocolate chips, etc. Roll into small balls (golf ball size) and flatten with glass dipped in sugar. Bake 10 to 12 minutes or until bottoms are golden. Cookie should not get brown. Cool on wire rack.

How about chocolate lace cookies?

MILK CHOCOLATE FLORENTINE LACE COOKIES
COOKIES:
2/3 c. butter
2 c. quick oats, uncooked
1 c. sugar
2/3 c. flour
1/4 c. corn syrup
1/4 c. milk
1 tsp. vanilla extract
1/4 tsp. salt

FILLING:
1 (11 1/2 oz.) pkg. (2 c.) milk chocolate morsels

Cookies: Preheat oven to 375 degrees. Melt butter in saucepan. Remove from heat; stir in oats, sugar, flour, corn syrup, milk, vanilla extract, and salt; mix well. Drop by level teaspoonfuls, 3 inches apart onto foil-lined cookie sheets. Spread thin with rubber spatula. Bake 5 to 7 minutes. Let cool. Peel foil away from cookies.

Filling: Melt over hot (not boiling) water, milk, and chocolate morsels; stir until smooth. Spread chocolate on the flat side of each half of the cookies. Top with remaining cookies.

My notes

Do not go larger than a teaspoon. Only place 6 on a large cookie sheet and stagger them, they will run together if too close or too large. I put then in the fridge for about 30 minutes to get the chocolate to set before placing them in the cookie tin. I also sprayed the foil with Pam since another version mentioned greasing the tin foil. I lifted the foil onto racks to cool as well.
