Healthy Oatmeal Cookie Recipe???

Thursday is oatmeal cookie day, so I volunteered to bake them for the residents at the nursing home where I work.I plan on making some regular too.

The residents will probably eat the regular ones, but I want to make some that my administrator can eat.

I found this recipe but I'm not sure how good it will be. Any opinions or recipes are welcome.

Oatmeal Cookies (Weight Watchers)

1 cup brown sugar, packed

3/4 cup unsweetened applesauce

1 large egg white -- lightly beaten

2 tablespoons vegetable oil

2 tablespoons vanilla extract

1 cup raisins

2 cups rolled oats

1 cup sifted cake flour

1/2 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

Position rack in the center of the oven and preheat oven to 350 degrees F. Line baking sheets with parchment paper or coat with nonstick cooking spray.

In a large bowl, whisk together sugar, applesauce, egg white, oil and vanilla until smooth. Stir in raisins.

In a medium sized bowl, stir together oats, cake flour, whole wheat flour, baking soda, cinnamon and salt. using a wooden spoon, stir the dry ingredients into the wet, mixing just until blended.

Drop the dough by tablespoonfuls onto a prepared baking sheet, spacing cookies about 1 1/2 inches apart. Bake for about 15 minutes or until lightly browned. Transfer cookies to a wire rack and let cool.

I tried this recipe last week and it was a winner. It has oil and whole eggs, which yours doesn't, but uses agave nectar instead of sugar (which I'm trying to avoid). I used grapeseed oil, as I don't have coconut oil on hand.

Agave Coconut Oatmeal Cookies

1/2 cup organic coconut oil
3/4 cup amber agave nectar
2 extra large eggs
1 tsp vanilla extract
1 1/2 c whole wheat pastry flour
1 3/4 c oats (not quick cooking)
1/4 c flax seed (pulverized in coffee grinder)
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt

Preheat oven to 325 degrees, and line 2 cookie sheets with parchment paper or release foil.

Beat the coconut oil in a large bowl with the agave nectar for about 2 minutes until itÂs well blended and slightly fluffy. Add the eggs one at a time and then add the vanilla. In another smaller bowl, combine the flour, oats, flax, cinnamon, soda, and salt. Add the dry ingredients to the wet ingredients, and stir until just combined. Drop onto cookie sheets by heaping tablespoons and flatten out slightly. Bake for about 12 minutes until the bottoms are slightly browned and the tops are dry. DonÂt overbake.

Thanks so much for the recipe. I've never used agave nectar or coconut oil and I'm not sure I could find it here in the middle of nowhere, but thanks to Amazon those ingredients are available to me. Thank goodness for Amazon Prime too.

Can you tell me what other things you use agave nectar and coconut oil for?

Well, I'm sitting here eating your cookies, Roselin, and have to say thank you for a delicious new recipe. These are really delightful, crispy, great flavor and texture. They're sure to become a standard in our house. I wondered as I was shopping for ingredients what would happen with substituting regular oatmeal or as Lorna mentioned, Irish oatmeal. How about chocolate lace cookies? MILK CHOCOLATE FLORENTINE LACE COOKIES COOKIES: 2/3 c. butter 2 c. quick oats, uncooked 1 c. sugar 2/3 c. flour 1/4 c. corn syrup 1/4 c. milk 1 tsp. vanilla extract 1/4 tsp. salt FILLING: 1 (11 1/2 oz.) pkg. (2 c.) milk chocolate morsels Cookies: Preheat oven to 375 degrees. Melt butter in saucepan. Remove from heat; stir in oats, sugar, flour, corn syrup, milk, vanilla extract, and salt; mix well. Drop by level teaspoonfuls, 3 inches apart onto foil-lined cookie sheets. Spread thin with rubber spatula. Bake 5 to 7 minutes. Let cool. Peel foil away from cookies. Filling: Melt over hot (not boiling) water, milk, and chocolate morsels; stir until smooth. Spread chocolate on the flat side of each half of the cookies. Top with remaining cookies. My notes Do not go larger than a teaspoon. Only place 6 on a large cookie sheet and stagger them, they will run together if too close or too large. I put then in the fridge for about 30 minutes to get the chocolate to set before placing them in the cookie tin. --Palm sugar is a low-glycemic sugar made from the sap of the Palmyra palm tree. It works like sugar in cooking and baking and has a caramel-like flavor, and is a tawny brown color. I order it on-line from several different places (currently using NAVITAS organic palm sugar). You might want to check with your health care professional before using this. I have several friends with diabetes who can't use Splenda (one friend ends up in the hospital each time she is unknowingly served Splenda) and use palm sugar in moderation without any problem. But each person is different. --Another sugar substitute I've been trying is SWERVE (made from Erythritol). This product is safe for diabetics. --Almond flour is made from ground almonds. It is high in protein (6 g. per 28 g. serving) and low in carbohydrates (6 g. per 28 g. serving). I purchase it in 5-pound bags from Honeyville Grain Farms (http://store.honeyvillegrain.com/blanchedalmondflour5lb.aspx), but I also sprout and dry whole almonds and grind my own in my little Wonder Mill, Jr., as well as using almond pulp leftover from homemade almond milk I make. Here is the long-ago original recipe from the Quaker Oatmeal box. I understand the one printed there now is different. This is the one that I have always used and everyone enjoys so very much Original Quaker Oatmeal Cookies 3 cups Quaker oats, (quick or old fashioned, uncooked) 1 cup all purpose flour 1 tsp salt 1/2 tsp baking soda 3/4 cup vegetable shortening 1 cup firmly packed brown sugar 1/2 cup granulated white sugar 1 egg 1/4 cup water 1 tsp vanilla Heat oven to 350. Grease cookie sheet. Combine oats, flour, salt and baking soda. In large bowl, beat together shortening, sugars, egg, water and vanilla until creamy. Add dry ingredients, mix well. Tracey, I have a container of coconut oil that I use for lots of things. Mind you, it is a solid oil. But it is excellent for high heat cooking. I put just a tiny bit in a pan and use a silicon brush to spread it around the base before adding anything.

I made muffins last week using coconut oil too. I just heated it up in the MW until it was melted, blended in some applesauce, and the rest of the wet ingredients, and then added it to the dry ingredients.

Coconut oil gets a bad rap because it's high in sat. fat, but IMO, everything in moderation.

(It's also a good moisturizer!)

I've never used coconut oil, but I've been using agave nectar lately because I'm avoiding sugar and other sweeteners which spike blood glucose. I've had trouble finding recipes. When I googled it, I got many hits for a recipe book using it, and also tips for using it to replace other liquid sweeteners.

I was hoping for a few real recipes, ones that would probably otherwise use sugar. It is hard to sub a liquid for a granular sweetener, so I was hoping for some T&T ones where someone else had done all the trying and testing. I ended up on a lot of sites for vegans and raw foodies, but I'm neither - I just want to avoid sugar.

So, I have assembles a few recipes like the oatmeal cookies above, also a decent chocolate brownie (OK, I like it, but then I also liked the 5 min microwave mug cake....). I've done my own experimenting with muffins, since I don't like them too sweet anyway, and they seem to be very forgiving when I mess around with liquid/dry proportions.

Anyway, I'm able to do a bit of baking now without sugar, but nothing that requires a whole lot of sweetener (I don't like to use more than 1/2 c. of AN), but I think I'm better off just avoiding really sweet stuff - there is still a lot out there that I can eat and enjoy.
